Borefts XI Day 1. Bottle. Hazy amber beer, small pale tan head. Light palate, semi dry, decent fine carbonation. Tart lemony sourness, getting acid. Some lemon sherbet on the finish. Overall a bit too tart!

Sampled at Borefts 2019. Hazy very dark brown with small beige head. Sour grains, cherries, oak, oxidized malts, cherry pits, almonds, soft leaves. Medium sour, light sweet and bitter. Solid medium bodied.

Nice fizzy-creamy mediumlasting head, dark reddish amber color. Aroma is slightly rich and dry sour-ish fruity, oak, cherry stones, soda powder, minerals, sour cherries, bark, mild vinegar, soil, sour cherries, dark malts, hints of chocolate. Taste is dry sour-ish fruity, soda powder, mild vinegar, oak, sour cherries, grass, cherry stones, bark, minerals, sorrel, citrus acid. Medium bitterness, dry sour-ish fruity mouthfeel. Nice.

750 ml bottle into tulip glass, 2016 vintage. Pours fairly crystal clear deep ruby red/orange/copper/brown color with a 2 finger dense and rocky light khaki head with fantastic retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big sour/tart/tangy red/black cherries, fruit skin/pits, lemon, lime, orange, grapefruit, peach, plum, apricot, pear, red/green apple, currant, red grape/wine, oak, peppercorn, hay, straw, grass, caramel, brown sugar, and toasted bread; with lighter notes of chocolate, leathery/musty/lacto funk, red wine vinegar, and yeast/oak/toasted earthiness. Damn nice aromas with great balance and complexity of cherries, fruity/acidic/funky/spicy yeast, oak barrels, and dark/bready/light roasted malt notes; with big strength. Taste of huge sour/tart/tangy red/black cherries, fruit skin/pits, lemon, lime, orange, grapefruit, peach, plum, apricot, pear, red/green apple, currant, red grape/wine, oak, peppercorn, hay, straw, grass, caramel, brown sugar, and toasted bread; with lighter notes of chocolate, leathery/musty/lacto funk, red wine vinegar, and yeast/oak/toasted earthiness. Light-moderate fruity/lactic tart/sourness, fruit tang, and yeast/oak tannin spiciness on the finish. Lingering notes of sour/tart/tangy cherries, fruit skin/pits, lemon, lime, orange, grapefruit, peach, plum, apricot, pear, red/green apple, currant, red grape/wine, oak, peppercorn, hay, straw, grass, caramel, brown sugar, toasted bread, leathery/musty/lacto funk, red wine vinegar, and yeast/oak/toasted earthiness on the finish for a while. Amazing complexity, robustness, and balance of cherries, fruity/acidic/funky/spicy yeast, oak barrels, and dark/bready/light roasted malt flavors; with an awesome malt/tart/sourness, tangy fruit, and yeast/oak spiciness balance; with minimal puckering flavors after the finish. Fairly crisp finishing. Light-moderate increasing dryness from lingering tart/sourness, tangy fruit, and yeast/oak spiciness. Medium carbonation and body; with a very smooth, moderately creamy/grainy, and acidic/tangy/tannic balanced mouthfeel that is great. Minimal warming alcohol for 6.9%. Overall this is an amazing fruited dark sour/wild ale! All around incredible complexity, robustness, and balance of cherries, fruity/acidic/funky/spicy yeast, oak barrels, and dark/bready/light roasted malt flavors; very smooth and fairly crisp to drink with the modestly acidic/tangy/tannic/drying finish; not overly lactic. Amazing balance of super jammy cherries and Brett/Lacto complexity; with great oak presence and dark/bready malts against acidity. Minimal residual sweetness with crisp acidic/tangy/tannic dryness. A highly enjoyable offering, and amazing style example. Best sour I've had from them so far.

Bottle. Dry lemon peel, cherry, chocolate caramel malt, and dry grass aroma. Brown with moderate head. Dry citrus/cherry, chocolate caramel malt, and moderately sour vinegar, and moderately bitter/astringent dry hay flavor. Good body.
