Urweisse

Classic Bavarian Weissbier, actually brewed in Bavaria for many decades by a 19th-century brewery most renowned for its Doppelbock (Celebrator), from a 50 cl bottle bought at Meldert in Holland. Released in a Hefeweizen 'Vase'. Very frothy, rocky, off-white, thickly plaster-lacing, very dense and firm, stable head, misty amberish-tinged peach blonde robe - a bit lighter than usual for a Dunkelweizen - with lots of lively sparkling shooting upwards from the bottom and sustaining the head. Aroma of ripe banana, sweet Japanese cherry tree blossoms (it is that time of the year), brioche bread, honey or even honey waffles, freshly cut Durondeau pear, clove, gingerbread to even vague cinnamon, hints of cake dough, peaches, roses, grass to even fresh basil, mineral water. Fruity onset, obvious isoamylacetate (banana ester) but nowhere bubblegummy and remaining very convincingly real banana-like, flanked by red apple and ripe pear with a dash of green melon thrown in, lively carbonated but in a soft and fine-bubbled way; mild wheat sourishness underneath, developing further under a much sweeter, cake-doughy and brioche-bready barley malt flavour with a vague caramelly edge - the barley even superseding the wheat at first sight, but the latter does continue to execute its slick, soapy, sourish effect, importantly. Quite expressive phenolic spiciness joins in halfway, clove-like as can be expected but also vaguely reminiscent of cinnamon and gingerbread; pleasant soft yeast and malt breadiness graces the finish, where only the slightest aroma of floral hops come in, adding little to no bitterness. The sourish side of the wheat provides some refreshment, but sweetness, in a honeyish, banana bread-like way, remains the dominant element here, though not in a bothersome way. 'Urdeutsch' indeed, sitting in the very heart of this lovely Bavarian tradition, comfortably positioned against the likes of Schneider, Weihenstephaner, Maisel's and Tucher - but clearly on the sweeter side of the spectrum, almost in a honey waffle-like way; the sourish aspect of the wheat remains subtle in comparison with many other Weissbiere, but its powers in keeping this brew refreshing should not be underestimated. All things considered, I personally prefer a tad more wheat sourishness in my Weissbiere, but who am I to disagree with an institute like Ayinger - it would be like telling Silly in Belgium to make their nineteenth-century saison less sweet because modern style prescriptions forbid sweetness in saisons (I actually did tell them many years ago - but I was younger back then). All things considered: one that truly belongs to the gentleman's league of classic Bavarian Weissbiere and I love it.

(bottle 0,5l from beershop.cz online shop) Overall: Good classic weizen. Just a bit on the darker side and fuller bodied. Aroma: Malty sweet, wheat, banana. Appearance: Cloudy amber. Persistent white head. Taste: Medium sweet, wheat malt, banana. Palate: Medium-full body. Creamy texture.
