CYGNUS: Cherry (Blend A) is a blend of three years of traditional, Lambic-inspired, coolship, spontaneous ale that follows the Méthode Traditionnelle guidelines. The blended base beer was refermented with two different kinds of whole tart cherries, Montmorency and Balaton, including the cherry pits which adds to the classic complexity and flavor associated with Kriek. After several months of aging the beer on cherries in oak barrels, the beer was removed and stored. More base beer was added to the cherries, extracting more color and a milder nuanced flavor. Three blends were created, each with their own unique character and final fruit level.

Bottle thanks to Rainer. Pours a hazy pink with small white head that lasts. The aroma is cherry, oak, floral, brett. Thin body, tart cherry, light funk, very acidic, good.

Bottle shared at Lucky Bamboo. Pours a clearish copper with a finger of white foam that lingers. Lovely tart cherry forward nose with some oak, wet hay, horseblanket and faint lemon. Good acidity on the palate, but not overly acidic. Loads of cherry pit, funky cherry flesh with oak, faint vanilla notes and more wet hay. Good body.
