STARGATE begins as a custom blend of 8-10 month old spontaneous solera sour golden base with 100% coolship caught wild microbes. We then added a heavy amount of whole fruit into two different types of whiskey barrels from our friends at Law's Whiskey House. Freshly dumped barrels were filled with our base sour golden, then tart nectarines from the western slope were added to Bourbon whiskey barrels, while juicy Palisade peaches from our family's orchard were added to the Rye whiskey barrels.
Refermentation and subsequent aging took place in these separate bourbon whiskey and rye whiskey barrels. After tasting the barrels apart and blended, we found that the fruit-forward rye whiskey and bourbon whisky complemented and showcased each fruit with more depth and complexity than the individual barrels alone. This blend does works so well to balance the juicy peaches with tart nectarines, then adds an incredible complexity with spice of the rye and rich vanilla, oak, and bourbon finish.
This beer will develop in the bottle for years, however much of the fruit flavor will diminish or change, so we recommend enjoying at least one bottle fresh if you do intend to cellar.

Bottle @ Pastry Diabeetus Fest 2018 thanks to Elmer! Pours hazy orange with a white head. Aromas of apricots, peaches, cheese, sweet oak, vanilla, light spicy, citrus. Taste has sweet apricots, leather, cheesy funk, light vinegar, citrus, sweet oak.

Bottle pour at State of Origin. Pours a clearish gold with a finger of soapy head that lingers. Straight nectarine and peach on the nose with wet hay, cobweb, must and oak notes. Lightly tart and funky on the palate, with more wet hay, stone fruit, grass and woody barrel notes. The bourbon comes out on the finish and is tactfully done. Never boozy or cloying or overpowering, the barrel sits alongside the peach and nectarine nicely. Bottle thanks to AJ. Pours a cloudy yellow orange with medium white head that lasts. The aroma is nectarine and peach flesh, oak, rye, funk. Medium body, strong stone fruit, oak, light funk, nice tartness, enjoyed this.
