Amber is a well cellared, rounded, malt-accentuated Australian wild ale. Our traditional recipe calls for an extended boil which caramelises rustic pale grains in order to develop a copper colour and malt sweetness. Light levels of hopping balance with the toasty characters in an extended cooler fermentation with our house culture. Following fermentation, we rack Amber into French oak barrels to further develop a smooth palate and express funky, tart characteristics from our indigenous yeast. We select and blend well evolved barrels for a desired malt forward with subtle acidic character. The slightly heavier characteristics of this beer make a fantastic complement to food and offer a variety of flavours to both compare and contrast in pairing.

Nose is tarte fruit esters, vinous, light balsam tunes, herb, woodruff, light acidic nostril tickle.
Taste comprises wood must, acidic tinge, sharp fruit rinds, vinous, barnyard, damp oak.
Medium bodied, fine carbonation, semi drying close with a balanced puckering spike.
Solid sour.

Panda at home thanks to Ed Danlo. A deep amber brown coloured pour with a halo of loose beige head. Aroma is semi sweet, toasted brown sugars, funky woodland fruits, barrel staves, varnish, toasted wood, musty fruit. Flavour is composed of sour tangy fruit, cranberry, vinous funk, woody tannin, toasted wood, light lemon tang. Palate is tangy, woody sour, musty, mellow carbonation.

18/11/2025. Bottle shared by danlo, cheers Ed! Good pour. Nice aroma. Fruit cake, caramel malt, hedgerow berries, prune, citrusy, seaweed. Good body, lightly drying. Enjoyable.

750ml bottle from Hop Knocker. Reddish dark amber brown colour, bubbly white foamy head and aroma of sour fruits, citric rind, funk. Taste is tart, sour fruity, citrusy lemon rind, some malt, woody oak, and funky, acetic, lactic, salty with some bitterness. Medium bodied, soft carbonation, drying soured finish. Nicely drinkable.

Clear brownish colour with small head.Aroma of tart grapes and wood mild tart and sour with good notes of lactose and wood sweet and sour with mild finish.

A little cloudy dark red amber beer, small creamy white to off-white head, a little stable, non adhesive. Aroma: nice, pretty fruity, some dried fruits, raisins, sourish impression, a little funky, cheesy touch. MF: ok carbon, medium body. Taste: pretty sourish, a bit lemony, acidic touch, raisins, a bit oxidized, very fruity, nice! Aftertaste: some caramel, more acidic, lemony touch, a hint of vinegar, slightly bitter, acidic, hint of tannins, lemony, nice one!

(Draught at Craft Beer Clerkenwell, London, 16 Nov 2023. Blend #38) Brownish amber colour with brief, beige head. Fruity, sourish nose with oak wood, vinegar, caramel and grapes. Fruity, tart taste with notes of caramel, vinegar, oak wood and grapes. Medium body, dry. Tart and woody, moving in to Rodenbach territory. Very nice.

Pours light brown with a lasting head. Aroma: red grapes, french oak barrels, subtle dark fruits and wild yeast. Taste: astringent oak barrels and wild yeast. Very astringent mouthfeel.
