Bourbon Barrel-Aged Imperial Stout

We took our big full bodied imperial stout and threw it in some bourbon barrels to age for 18 months. After this extended period of aging, we found a powerful nose of dark fruit notes with a balanced sweetness and notes of molasses while picking up distinguished bourbon and oak from the barrels that continue into slightly roasted flavors of bitter chocolate and a finish that lingers.

Can from Holiday Market. Pours a pitch black with a finger of brown head that dissipates. Prune and cacao nib on the nose with warming bourbon and light oak aromas. More of the same on the palate with some roasted coffee and molasses that comes out. More bourbon. A bit thin on the palate, but overall pretty solid...especially for the price point.

16 ounce prowler into snifter, filled on 5/12/2018. Pours opaque pitch black color with a 1 finger dense tan head with great retention, that reduces to a thin lace cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big milk/dark chocolate, cocoa, coffee, caramel, brown sugar, vanilla, toffee, bourbon, coconut, toasted oak, marshmallow, fudge, and dark/brown bread; with light notes of molasses, dark fruit, licorice, leather, smoke, char, and roast/toast/oaky earthiness. Damn nice aromas with great balance and complexity of dark/roast/bready malt and bourbon barrel notes; with great strength. Taste of huge milk/dark chocolate, cocoa, coffee, caramel, brown sugar, vanilla, toffee, bourbon, coconut, toasted oak, marshmallow, fudge, and dark/brown bread; with light notes of molasses, dark fruit, licorice, leather, smoke, char, and roast/toast/oaky earthiness. Very mild hop/char bitterness and bourbon/oak tannin spiciness on the finish. Lingering notes of milk/dark chocolate, cocoa, coffee, caramel, brown sugar, vanilla, toffee, bourbon, coconut, toasted oak, marshmallow, fudge, dark/brown bread, light molasses/dark fruit/licorice, and roast/toast/oaky earthiness on the finish for a while. Incredible complexity, robustness, and balance of dark/roast/bready malt and bourbon barrel flavors; with a nice roasted bitter/sweet and bourbon/oak spiciness balance; with zero cloying/acrid flavors after the finish. Light-medium carbonation and fairly full body; with a very smooth, creamy, silky, velvety, and rich mouthfeel that is fantastic. Slight sticky hops, chalky roast, oak tannins, and increasing dryness. Mildly increasing warmth of 11.5%, with zero barrel booziness lingering after the finish. Overall this is a fantastic barrel aged imperial stout! All around outstanding complexity, robustness, and balance of dark/roast/bready malt and bourbon barrel flavors; very smooth and dangerously easy to sip on for the big ABV. Extremely rich and well rounded imperial stout malt complexity, with perfect barrel integration/balance. Not overly roasty, bitter, or tannic; with an amazing mouthfeel. A highly enjoyable offering.

Bottle shared at Lucky Bamboo. Thanks Mike! Pours a deep brown to black with a finger of foam that dissipates quickly to just a small head. Bourbon-forward nose with roasted cacao nib and caramel aromas. Lots of chocolate and bourbon on the palate. Sweet, but the roasted malt character helps balance it a bit.
