Spontaneously Fermenting Yeast + Pale + Sour

Fermented with a locally harvested culture of yeasts and bacteria from the orchards that Somerset is famous for.

The wet climate of Somerset is perfect for the orchards and pastures that are the lifeblood of our area, they are also perfect conditions for the yeasts, bugs and critters that we need to make a unique sour beer.

Somerset Wild is a beer that shows how much we love working with our environment and the seasons to produce idiosyncratic beers that leave you questioning your perceptions. A beer with the acidity levels of a white wine or farmhouse cider, with a depth, complexity and refreshing drinkability to it that makes it a wonderful beer to pair with food.

This is a magic beer to enjoy with fish, particularly oily fish such as mackerel or sardines, caught off the south-west coast, or even better why not try it with a ceviche. The acidity of the beer will work as the perfect accompaniment.

Very cider & white wine aroma with quite pronounced tartness,underneath white bread,biscuit,green/sour apples also that typical Wild Beer

Tap at Be Unorthodox Bar. Pale yellow color with minimal white head. Aroma of yeast, funk some tartness. Tart taste with lemon, apricots, yeast, salt. Very good.

19/VIII/18 - on tap @ DOK Brewing Company (Gent) - BB: n/a (2018-1057)

Clear pale whitish yellow beer, practically no head. Aroma: funky, lots of lemon juice, not much else. MF: ok carbon, medium body. Taste: pretty sweet, funky, bit dirty, fruity touch, lemony, some peaches. Aftertaste: bit funky, sweetish grains, bit yeasty, some banana peel.

Tap at the hanging bat. Nose is citrus, orange, apricot, mandarin. Palate is mandarin, apricot, salty pineapple. Not traditional Berliner.

On tap at Lajbah, Ljubljana. Pours pale yellow colour, somewhat hazy and topped with medium small white head, nonlasting. Strong vinous nose, fresh and cellar like. Medium soury, some slight vinegar feel, but not too much and not too burning. Very light. Nice and fresh.

Tap@Taphouse, Copenhagen - golden coloured pour with white head. Medium sour apple and citrus fruity and wheaty, light malt, yeast, medium to light bodied, tart fruity finish.

Bottled 330ml. -from Pivny Raj Bratislava. Yellow coloured, minimal white head, sourish white wine in the nose. Acidic citrusy, sourish white wine and notes of fruits with light spicy tartish finish. Quite pleasant.

At a tasting, many thanks, almost no head, hazy pale yellow color, aroma of white wine and brine, flavor of cucumber brine with some dill and apple and some more fruit, medium sourness. Unusual but highly enjoyable.
