Fermented with a locally harvested culture of yeasts and bacteria from the orchards that Somerset is famous for.

The wet climate of Somerset is perfect for the orchards and pastures that are the lifeblood of our area, they are also perfect conditions for the yeasts, bugs and critters that we need to make a unique sour beer.

Somerset Wild is a beer that shows how much we love working with our environment and the seasons to produce idiosyncratic beers that leave you questioning your perceptions. A beer with the acidity levels of a white wine or farmhouse cider, with a depth, complexity and refreshing drinkability to it that makes it a wonderful beer to pair with food.

This is a magic beer to enjoy with fish, particularly oily fish such as mackerel or sardines, caught off the south-west coast, or even better why not try it with a ceviche. The acidity of the beer will work as the perfect accompaniment.

Bottle sample at a tasting at Yoav's place. Thanks zvsn & rayaron. Pale golden, white wine-like color. Farty, pickled vegetables, dill pickles, apples, tart and a bit sweetish. Weird.

0.33 l bottle brought by Višnja and Goran Pilot. Cloudy pale greenish. Small white head. Sour cucumber or other vegetable. Vinegar. Very sour, almost extremely. Intense, although no complexity. Medium body, soft carbonation, strong warm sour finish. Beyond puckering.

Bottle from Maria, Kraków. Very pale, cloudy, almost no head. Aroma is raspberry, a bit of coriander. Lightly sour - mild, pleasant, not aggressive. Light body, easy to drink. Very good.

Draught at BeerGeek Bar. Slightly cloudy, pale straw colored. AROMA- sour, fermented. FLAVOR- very sour, touch of pickled cucumbers. Light to medium bodied.

Draught. Frothy white good mostly deminishing head. Greenish yellow colour. Light malty and hoppy aroma. Moldy citrus notes. Moderate bitter flavor. Mold/citrus/hops. Average moderate bitter finish. Oily palate.

33cl bottle from Beer52.com. A cloudy pale straw colour with no head but moderate carbonation; apple aroma; sharply sour fruity taste with a bready body; and a tart dry finish. Tart, crisp and fresh.

Tap. Lemon juice colour, minimal head. Aroma: strong lactic sourness, walnut. Light body. Medium sour taste. Lactose. Bread, sour fruit. I should have had it in the hangover morning. This one would wake up the dead.

Draft. An unclear yellow beer with next to no head. The aroma has notes of lemons, lacto, and straw. The flavor is sour with notes of lemons, pears, lacto, and straw, leading to a tart finish.
