We thought we would be able to make this beer exactly how we wanted...
The "all-day" wild beer, tart and fruity, but well-hopped and drinkable. We have been chasing this beer since we started the brewery and love this combination.
Juicy, tart gooseberries and out own culture of wild yeast from local orchards give this a gentle acidity. Whilst a generous "dry-hop" of complementary hops enhance the fruitiness and give a light but moreish bitterness.

On tap at Lovebucket. Pours pale. Lemon, bread, little tart gooseberry, pepper. High carbonation. Nice.

Draught @ Mig & Ølsnedkeren. Pours yellow with a white head. Aroma of malt, yeast, light brett, grass, fruity hops. Flavor is light sweet, light bitter, malt, yeast, grain, fruity hops. Medium body, average carbonation. 7-3-6-3-14. 240617

Tasted from the tap on the 09/05/2017. Clear yellow colour with a medium frothy white head. Aroma of lemon, light tart and strawberries. Taste is medium lemon and other citrics with a yeasty finish. Some tart aftertaste. Next one please!

On tap @ Bergen Craft Beer Fest. Pours light yellow, with a small creamy head. Aroma is light tropical notes of apricots and fruity brett. Medium body, with soft carbonation. Flavour is tart citrusy notes, light tropical notes and lactic acid.

Bottle 330ml. [ As Wild Beer Wild Goose Chase ].Clear medium orange yellow color with a average to large, frothy - fizzy, good lacing, mostly lasting to diminishing, off-white to white head. Aroma is moderate malty, wheat, gooseberry, zesty, funky notes. Flavor is moderate sweet and light light acidic with a long duration, pale malt - wheat, gooseberry, zesty, funky notes. Botella 33 cl VI cata ratebeer Asturias en Cimmeria. (r129). Color amarillento pálido transparente espuma blanca. Muy suave y ligera con toques de maltas y cereales algo toscos ligeros herbaceos y cítricos. Cuerpo ligero, refrescante bastante espumoso. Corriente.

Bottle from Honest Brew, part of my work secret santa. Hazy yellow golden colour with a thin head. Aroma has brett, lemon and citrus pith and sour berries. Taste light sour and berry sweet. Light smooth body.

Keg at the Red Squirrel Emporium - High Wycombe. Pours mostly clear yellow-gold with a frothy, white head. There’s a little brett in the nose, some lightly zesty lemon, wheat bread. Light sweet flavour with more subtly funky brett notes, hay, lemon peel. Light bodied with average to lively carbonation. Pretty clean in the finish with touches of musty hay bale, lemon, wheat, light funk. Solid. Quite drinkable.
