We thought we would be able to make this beer exactly how we wanted...
The "all-day" wild beer, tart and fruity, but well-hopped and drinkable. We have been chasing this beer since we started the brewery and love this combination.
Juicy, tart gooseberries and out own culture of wild yeast from local orchards give this a gentle acidity. Whilst a generous "dry-hop" of complementary hops enhance the fruitiness and give a light but moreish bitterness.

Bottle. Nice head with good duration. Color is golden. Aroma and taste are rich brett, citrus, malt, fruits, hops and flowers. Nice sour finish.

Bottle from Cocktails, Littleborough. Hazy yellow coloured ale with a very thin head. Has a palatable mild sourness, with a good fruitiness too.

Nice fizzy-creamy mediumlasting head. Aroma is strange sour-ish, weeds, minerals, rubber, sulfur, grain, unripe berries, hay, berry skin, sawdust, shed, paper. Taste is dry sour-ish, weeds, unripe berries, hay, grass, berry skin, grain, minerals, sawdust, rubber, paper, sorrel. Medium bitterness, slightly dry and harsh mouthfeel. Not my cup of tea.
