We thought we would be able to make this beer exactly how we wanted...
The "all-day" wild beer, tart and fruity, but well-hopped and drinkable. We have been chasing this beer since we started the brewery and love this combination.
Juicy, tart gooseberries and out own culture of wild yeast from local orchards give this a gentle acidity. Whilst a generous "dry-hop" of complementary hops enhance the fruitiness and give a light but moreish bitterness.

On tap at Jessop House, Cheltenham 5/1/2016. Yellow in colour, with a slight, white, head. Sherbety citrus and gooseberry fruits, a flinty edge and sour finish. Enjoyable.

330ml bottle. Yellow gold colour, white foam head and aroma of fruity floral citrus rind and light funk. Taste is grainy with zesty citric grapefruit and hoppy light bitterness. Light bodied, soft carbonation. dry tangy sour finish. Quite drinkable.

330ml bottle at home from trade with kermis. Thank you Chris! Light hazy yellow golden color with white head. Aroma is yeasty, dusty, bretty, barnyard notes, grassy, citrusy fruity, berries, tropical fruits. Sweet, light bitter and acidic taste like aroma. Medium oily body with soft to average carbonation.

Bouteille 33cl, merci Pierre T. Dorée légèrement voilée, col blanc. Arôme au bouquet fruité, pointe de levure, rétro de grains concassés avec un léger côté rustique. Retrouve un houblonné modéré assez vert-noble. Palais sur une effervescence moyenne, pointe d’aigreur et rétro de grains. Profil reste rustique, un peu sec et poussiéreux. Houblonné noble apportant une note citronnée et fleurie. Correcte.

330ml bottle, hazy gold. Lovely lime citrus aroma. Yeasty vanilla cheesecake in the taste. Not too much gooseberries coming through, more of a fresh keylime fruitiness. A super refreshing blend. I want a case of this every summer.

On tap at the Kingston Arms, Cambridge. Mid-gold, hazy. Hints of yeast, lemongrass, hay in the slight aroma. Bittersweet taste, lent some sweet-umami from the yeasty character. Weak mouthfeel buoyed up by carbonation. There’s not a lot to this beer, which surprises me as Wild Beer are normally so full on.

Bottle from Cork and Cask. Appearance - cloudy golden with very little head. Nose - citrus, light spice and general yeastiness. Taste - dried orange and white pepper. Pineapple sorbet. Gooseberry as I looked for it. Palate - light to medium bodied with a creamy yet dry and tangy texture that continues through the finish. Overall - yeah, tasty saison.

Tap at Kaapse brouwers. Clear pale straw with small bright white head. Lemon, some fink and Brett, white grapes, gooseberries, light dough. Light sour with very light spicy bitterness in the finish. Light bodied with dry feel. Nice for the summer.
