Farmhouse Pale + Gooseberry + Zingy
We thought we would be able to make this beer exactly how we wanted...
The "all-day" wild beer, tart and fruity, but well-hopped and drinkable. We have been chasing this beer since we started the brewery and love this combination.
Juicy, tart gooseberries and out own culture of wild yeast from local orchards give this a gentle acidity. Whilst a generous "dry-hop" of complementary hops enhance the fruitiness and give a light but moreish bitterness.

33cl bottle from Beer52.com. A slightly hazy pale straw coloured pour with a fast fading white head; the aroma has some musty farmhouse yeast and a touch of gooseberry; the taste is sour, but with an indistinct fruitiness; and the finish is dry, but rather thin and disappointing.

Bottle shared with Erwin Van Moll @ Brewpub Van Moll during the bottling of Benzai’s 10k beer. Hazy pale yellow color, small white head. Smell and taste slightly sourish, lightly yeasty, fruity, fruitpeel, lemon, fruity herbs and spices lightly, lightly zesty. Dry, fruit sour-bitter finish. Suitable body, medium carbonation. Solid saison.

Can. Nose is pronounced gooseberry with quite a lot of funk, hint of lemon sherbert. Taste is less effective; gooseberry, mineral, spice, grass, lemon and pepper little funk in the sour finish. It’s nice enough and quite refreshing, but just painfully thin, it never seems to get going.

330 ml. shared by Kraddel @ Rampkrot. Thanks! ½ consumed. The ingredient lists of these Wild Beer’s always seem far more interesting than the actual result. Hazy golden, little white head. Weird oily and tart nose, sweetish yeast,… Taste is fizzy, mineral, nondescript, lightly yeast & light gooseberries but nowhere near as puckering as the real thin,… Touch fizzy,… Okay but too bland for what it is really.

Pours clear blonde, no real head. Smell is bit funky. Taste is bitter. mildly sour. salty aspect comes out in the aftertaste. Ok beer , good for the style.

[3/4/15] Draught at Craft Beer Co. Covent Garden in London. Hazy pale yellow. Mildly sourish and funky aroma with fruits and a bit of graininess. Funky flavor, a bit sourish, with some graininess and a bitterish finish. Quite light-bodied.

(Draught at In De Wildeman, Amsterdam, 27 Feb 2015) Muddy brownish yellow colour with frothy, off-white head. Fruity, sourish nose with notes of citrus, dark bread and grass. Fruity, malty taste with bread, citrus, lemon peel, a touch of grass and a gentle bitterness. Medium body, quite dry. A bit weird, but quite tasty. Tasted better than it looked (might have been the last from the keg). Quite nice.

Cask at Craft Beer Co, Covent Garden on 28th February 2015. Hazy gold with thin vanishing off-white non-lacing foam. Intense citric hop and gooseberry tang in aroma. Fruity in-mouth with berries, citrus and yeastiness. Malty, fruity finish. Light mouthfeel and a fair amount of body. Rated as a novelty ale.
