We thought we would be able to make this beer exactly how we wanted...
The "all-day" wild beer, tart and fruity, but well-hopped and drinkable. We have been chasing this beer since we started the brewery and love this combination.
Juicy, tart gooseberries and out own culture of wild yeast from local orchards give this a gentle acidity. Whilst a generous "dry-hop" of complementary hops enhance the fruitiness and give a light but moreish bitterness.

Draft at In De Wildeman. Pours hazy golden orange with an off white head. Aroma of brett funk, weeds, light citrus and a touch of herbs. Flavor is light sweet and acidic. Light bodied with moderate carbonation.

Can from The Beerhive. Hazy pale golden body with a thin white head. Low carbonation. Faint lacing. Aroma of underripe melon, butterscotch, green apple and onion. Flavour of lime, biscuit and straw. Thin body with a light mouthfeel. Soft fizz. Simple, refreshing.

On tap at Craft Covent Garden, Saturday 7th February 2015 This is a little bit of a halfway house, a bit sour and tart but not that sour or tart. A little zippy and refreshing, it?s nice enough but overall a little safe. A6 A4 T7 P3 Ov13 3.3

330ml bottle. Cloudy, orangey golden colour with average, frothy, half-way lasting, minimally lacing, white head. Spicy yeasty aroma, fruity notes of gooseberry, a touch of grape juice, cautious hints of brine. Taste is initially slightly tart, fruity, gooseberry notes, yeasty, spicy middle part with some pale malt support and hints of grape juice, sour-ish, slightly watery finish, lemon juice, a touch of woodruff. Light, refreshing, easy drinkable - quite nice.

Bottle @ derat, large sample. Slight hazy pale yellow color, short frothy head. Aroma is slight funky, grapes, white wine, gooseberry, slight spicy. Bit bitter, bit sweet in taste. The gooseberry makes it quite white wine like. Decent stuff.

Bottle. StarmoreBoss, Sheffield. Cloudy yellow. Thin, dense, white head. Lemon rind. Bready yeast. Sweet grain. Very light spice. Taste is light dry. Fairly thin mouthfeel. Finishes light dry. Ok, easy drinker, but Wild Beer do better.

Bottle split at Mother Arch, thanks to Fergus, 03/01/15. Lightly hazed golden with a decent off white covering. Nose is tangy citric rinds, lemon, straw, green berry notes. Taste comprises raw citric elements, goosberry, spice, straw, faint kiwi, lemon peel. Medium body, fine carbonation, semi drying close with a little pepper linger. Decent enough saison.

Hazy paleish gold beer, short white head. Palate is light and mildly crisp. Light sourness, mild floralness and a smooth and only mildly tart gooseberry. Trace of lemon before a dry finish. Simple stuff but fairly drinkable.

Bottle shared at Kernel. Translucent pale yellow coloured pour with a loose white head. Aroma is perfumed Heather, little kaffir lime,. Flavour is dull doughy wheaty malts, little straw, perfume, lavender, little umami. Lingering grainy and pineapple. Ok. Lingering gooseberry tart. Interesting.
