We thought we would be able to make this beer exactly how we wanted...
The "all-day" wild beer, tart and fruity, but well-hopped and drinkable. We have been chasing this beer since we started the brewery and love this combination.
Juicy, tart gooseberries and out own culture of wild yeast from local orchards give this a gentle acidity. Whilst a generous "dry-hop" of complementary hops enhance the fruitiness and give a light but moreish bitterness.

Bottle thanks to Fergus. Cloudy gold lasting white head. Ok saison good fruit quite sharp quite decent.

330ml bottle from cornelius. Pours hazy yellow gold, thin white head. Aromas of gooseberry, sherbet, with earthy, funky notes. Taste has more of the fruit and funk, light spicy yeast. Light body, refreshing. Crisp, dry finish. Good.

Keg at SixD Aberdeen. It pours lightly hazy pale gold with a small white head. The nose is soft, fruity...white grape, gooseberry, yellow plum and nectarine...straw, light spice, hay and earth. The taste is crisp, bitter, juicy, white grape skin, gooseberry, sherbet, yellow plum, mild tartness, earth and a touch of funk with a dry finish. Light-medium body and fine, prickly carbonation. Crisp and pretty crushable gear. Very well done.

Cask at the hanging bat.. Light hazy yellow... Thin white lacing... Soft Gooseberry fruits.. Light zezty nose... Soft sweet fruits body... Juicy grapefruit... Lught floral... Oddly for me id like it a little tarter
