This beer has a rich and complex malt flavor balance with a bit of spicy noble hops. The peach is very subtle but noticeable, with a dry finish from the champagne yeast in the 2nd fermentation in the French Chardonnay barrels.

Bottle at Craig’s tasting 16th Oct 2012
Light brilliant golden, soft haze, not much head
Aroma - light nose..where’s the alcohol?..generally light aroma of pale malts
Taste - soft belgian yeasts, sott fruity pale caramel malts, really easy going, nice fruity apricot
Palate - medium carb, thinnish body, very light, nice soft peach malts, bit of booze only shows itself in the tail of the finish
Overall - This is really nice soft fruity mellow belgian ale with a surprisingly subdued nose. Alcohol is so well hidden in this though.

Release #3. 22oz bomber aged the better part of a year. Holds up quite exceptionally. Unfiltered bright orange. Lively effervescent carbonation. The peach really holds the beer together, connecting the upfront vinous Chardonnay and big malt undertones. Nice pleasant peach aroma, impressive for the massive ABV. A touch alcohol forward, but I would have guessed this was less than 9%. Solid, unique creation.

Bottle (Release #2) at Chriso - 25/09/12. Hazy mid yellow pour with no head. Peaches, sugar, a little toffee, farmy and a little hint of tarteness on the nose. Taste follows with tarte peaches, sugars, earthy tones, maybe a little over sweet. Medium bodied, fairly smooth on the palate with a moderate level of carbonation. Fairly well balanced for 10.8% and the alcohol was well hidden.

Bottle (release #2), thanks to Bill at ChrisO. It pours hazy straw yellow, with a thin white film. The nose is tart lemon, peach, sherbet, light farmyard and some tomato ketchup. The taste is sweet malt, sugar, straw, wood, light spice, candy, sweet peach, apricot and a faint hint of tartness, with a dry finish. Light-medium body and fine, prickly carbonation. Alcohol is fairly noticeable. Too sweet and thin.
