Sourdough Culture + Oak Barrel Fermentation

Our beautifully barrel aged sour beer has just been bottled and this batch is tasting incredible. its been blended from a mixture of 24 aged wine barrels and two bourbon to give it that kick of flavour. Read the story on sourdoughs creation bellow.

Beer and Bread have been showing off the magic of yeast for thousands of years, we decided to combine the two. The old and the new, contemporary ideas and historical techniques and ingredients, a very special beer that combines all these things and more.

6 months before we even had a brewery we started talking to Tom Herbert about the Hobbs House Bakery's 58 year old Sourdough yeast, and whether we could use it to ferment a beer. Tom was excited, we were excited!

After a year of trials (each trial took a really long time to develop) we decided to loosely base the beer on a Berliner Weisse style - a historical Sour beer style from Northern Germany, but with a Wild Beer slant to it. We have used the 58 year old sourdough culture and a little brettanomyces and put the beer straight into oak barrels for its primary fermentation.

Hazy orange-yellow color, small white head. Floating yeast. Aroma is tart and berliner weisse -like lactic. Light bodied. Tart, fruity, bretta, lingering citrus in the aftertaste. Nicely brewed Berliner Weisse. Good tartness.

Light orange, very hazy, thin white head, slight lacing
Aroma - Tart, lemon, peach, soft yeast, bit bready(!)
Taste - Lemony tart, soft bready yeast, fruity, really mellow for a Berliner Weisse, fairly simple but Iโ€™m liking this a lot
Palate - Medium carb, light body, soft tart, very refreshing, slight soft powdery. Finish is smooth, lemon soft tart
Overall - Not a complex beer, but good subtle flavours, this experiment went well. I enjoyed it a lot

Bottle split at Bruceโ€™s pad, big thanks to Leighton, 16/01/14. Hazed orange golden with a thin off white covering that clears to a swirl and edgeing. Nose is burnt sugars, bread dough, peanuts, citric tang, bitter orange. Taste comprises lemon rind, yeast, light funk, tarte apricot, sour bread, earthy. Medium bodied, fine carbonation with a little prickle, drying finale. Ok stuff, sour light, not too much depth or complexity, not one Iโ€™d revisit given a choice of others.

Bottle shared in London - picked up at Utobeer. Pours clear yellow with a fine, fluffy white head. Engaging aroma, lots of tangy citrus, lemon, grapefruit, mild funk. Light to medium sweet flavor with ripe lemon, some cornflakes, decent citric twang. Light to medium bodied with fine, massaging carbonation. Clean finish, lightly tangy, plenty of citric lemon, restrained funk, mild dough. Good stuff.

On keg at the Bath Brew House, 3/1/2014. Hazy gold in colour with a decent white head. Light sourness with a yeasty, doughy edge and some lemon in the finish. Tasted like a traditional cider without the apples. Fine.

Very hazy gold beer. Palate is light and mildly crisp. An interesting mix of sweet and sour here. Light lemony sourness matched by bready sweetness. Thatโ€™s about it. Semi dry finish. Interesting and fairly drinkable.

Keg at Barley Mow. It pours hazy golden amber with a minimal white head. The nose is smooth, bready, natural yoghurt, tangerine, stewed orange and marmalade. The taste is smooth, tart, sherbet, sour dough bread, orange peel, tangerine, kumquat, lactic notes and light chalkiness with a dry finish. Medium body and fine carbonation. Nice combination of sour dough and beer. Smooth, tart and balanced.

Bottle from House of Trembling Madness bottle shop, York. Cloudy, pale gold. No head. Aroma of home made cider. Tart, acidic, bittersweet apple. Taste is less tart, more tangy and yeasty. Surprisingly creamy palate. Tart, refreshing finish. Liked it.
