Our beautifully barrel aged sour beer has just been bottled and this batch is tasting incredible. its been blended from a mixture of 24 aged wine barrels and two bourbon to give it that kick of flavour. Read the story on sourdoughs creation bellow.

Beer and Bread have been showing off the magic of yeast for thousands of years, we decided to combine the two. The old and the new, contemporary ideas and historical techniques and ingredients, a very special beer that combines all these things and more.

6 months before we even had a brewery we started talking to Tom Herbert about the Hobbs House Bakery's 58 year old Sourdough yeast, and whether we could use it to ferment a beer. Tom was excited, we were excited!

After a year of trials (each trial took a really long time to develop) we decided to loosely base the beer on a Berliner Weisse style - a historical Sour beer style from Northern Germany, but with a Wild Beer slant to it. We have used the 58 year old sourdough culture and a little brettanomyces and put the beer straight into oak barrels for its primary fermentation.

330ml bottle from Kris’s Wines (I think!). Pours hazy yellow, with funky white wine & citrus aroma. Taste is tart sour, citrus, wheat, white wine, grapes and bretty funk. Crisp and hugely refreshing after a busy day!

Small slightly bubbly mediumlasting head. Aroma is mild sour-ish, hay, sour grass, old potatoe cellar, weeds, chalk, yeast, boiled asparagus, hints of citrus. Taste is slightly fresh sour-ish, soda powder, sour grass, grain, hay, weeds, potatoe, chalk, yeast, citrus. Medium bitterness, slightly dry mouthfeel. A nice enough berliner weisse.....

Flaske fra Matkroken, Stokka: strågul lett uklar med kort skum. Opp stiger en liflig, syrlig aroma av hjemmebakt surdeigsbrød og brett. Smaken er kjempeforfriskende og lekende elegant. Perler og snerper litt på tungen. Uvanlig mye glede i bare 3,6% og et uvanlig og spennende sommerøl. Skal definitivt kjøpes igjen.

330ml bottle. Pours pale lemon gold with no head. Aroma is ashy sour yoghurt. Taste has a sharp sour start with a mellow sour yoghurt finish. Touch of lemon in the aftertaste.

Bottle from Cotteridge Wines; clear straw yellow pour zero head, cheese and peach aroma, taste has light funk, sour apples, zesty citrus, bready malts a hint of wood.

On tap at The Old Red Cow, Spitalfields, Saturday 19th April 2014 Pours light gold with just a few stray bubbles on the periphery. Aroma is sour bread with a little light sulphourous note. Superbly refreshing, wonderfully tangy zappy the tastebuds with just the right amount of sourness, loving this! A7 A4 T9 P4 Ov17 4.1

Bottle 330ml. @ home.Light unclear medium orange color with a average, frothy, good lacing, mostly to fully diminishing, off-white to white head. Aroma is moderate malty, sour malt, malt, light wood - keller, light to moderate yeasty, sour yeast, dough, light soured milk. Flavour is moderate sweet and light acidic with a long duration, malt, light citrus - fruit tart, late finish is light apricot. Body is medium, texture is oily to watery, carbonation is fizzy. 330ml Bottle - Hazy gold/amber with a small head. Sourdough, sultanas and dried apricot in the aroma. Sour, tart and fruity taste with sultanas, dough, dried apricot and peach. Refreshing, tart and enjoyable.

Keg at brewdog Shepard’s bush. Aroma is light funk, tanin grape juice, light tartness. Hazed orange coloured pour with a reluctant white head. Flavour is dry citric acid, low musty funk grainy cereal finish. Light body with light acidic bite. Very drinkable. Some grape tanin in the finish.
