Sourdough Culture + Oak Barrel Fermentation
Our beautifully barrel aged sour beer has just been bottled and this batch is tasting incredible. its been blended from a mixture of 24 aged wine barrels and two bourbon to give it that kick of flavour. Read the story on sourdoughs creation bellow.
Beer and Bread have been showing off the magic of yeast for thousands of years, we decided to combine the two. The old and the new, contemporary ideas and historical techniques and ingredients, a very special beer that combines all these things and more.
6 months before we even had a brewery we started talking to Tom Herbert about the Hobbs House Bakery's 58 year old Sourdough yeast, and whether we could use it to ferment a beer. Tom was excited, we were excited!
After a year of trials (each trial took a really long time to develop) we decided to loosely base the beer on a Berliner Weisse style - a historical Sour beer style from Northern Germany, but with a Wild Beer slant to it. We have used the 58 year old sourdough culture and a little brettanomyces and put the beer straight into oak barrels for its primary fermentation.

Bottle. Pours hazy yellow with a small creamy head. Aroma is tart and yeasty with brett, farmyard, apples and vinegar, as well as grain and whiffs of oak. Quite full and creamy body with soft carbonation. Flavour is tart with yeast, apples and fruit, some notes of brett and wood, as well as notes of grainy malts. Nice sour fruity finish.

Bottle @ DØE meeting. Pours hazy pale yellow with a white head. Aroma of wheat, sourness, tart fruit, sourdough, brett. Flavor is mildly sour, brett, wheat, sourdough, light fruity. Thin body, average carbonation, light sour acidic finish. Refreshing, but ugly beer. 170914

Pours pale gold with a quickly fading head.Nose shows wheat, wild yeast-driven lemon and elderflower. Some bready notes too.Flavours include more of the bready character along with a nice gentle acidity and some lemon. Somewhat wheaty. Incredibly drinkable.Carbonation could be a little higher.

Bottle. An unclear yellow beer with a small white head. The aroma is sourish and fruity with a distinct doughy scent. It’s medium bodied and quite carbonated, lightly sourish and acidic, with pale malts, fruityness and lemon. Too much dough I think. That goes for the finish too. Lemon and pale malts and some bitterness. Quite nice this one but too doughy. 140725

Bottled. A hazy yellow beer with a huge white head. The aroma has notes of lemons. The flavor is sweet with notes of lemons and brettanomyces, leading to a tart finish.

cloudy yellow with lots of particles, practically no head. aroma is sourish, tart, faint woody notes, yeasty spicy notes. flavor is wild yeasty ,sourish, wood, sourish, citrussy.

33 cl bottle. Pours clear and golden yellow with a small white head. Aroma is mild mouldy and light citric. Light fruity. Tart, dry and wooden. Lingering fruity and slight citric finish. Dry and citric finish.

Bottle at home. The colour is cloudy, matt yellow with no head. Fresh aroma of buns, citrus, apple cider vinegar, heather, moist basement and willow. The flavour is a light version of the same but with more lime, wheat and some forest floor. Has a slick and sparkly mouth feel, and a light bitterness. A fresh, sour and well balanced beer.
