Sourdough Culture + Oak Barrel Fermentation
Our beautifully barrel aged sour beer has just been bottled and this batch is tasting incredible. its been blended from a mixture of 24 aged wine barrels and two bourbon to give it that kick of flavour. Read the story on sourdoughs creation bellow.
Beer and Bread have been showing off the magic of yeast for thousands of years, we decided to combine the two. The old and the new, contemporary ideas and historical techniques and ingredients, a very special beer that combines all these things and more.
6 months before we even had a brewery we started talking to Tom Herbert about the Hobbs House Bakery's 58 year old Sourdough yeast, and whether we could use it to ferment a beer. Tom was excited, we were excited!
After a year of trials (each trial took a really long time to develop) we decided to loosely base the beer on a Berliner Weisse style - a historical Sour beer style from Northern Germany, but with a Wild Beer slant to it. We have used the 58 year old sourdough culture and a little brettanomyces and put the beer straight into oak barrels for its primary fermentation.

Very very pale, almost clear color. Very nice sour nose with nice smokey rye character. Very nice tart mouth with lots of rye character. Very tart. Lovely dry sour rye beer.

33cl bottle from Meny, Kolsås. Pours hazy yellow with a small, white head. Yeasty and quite fruity aroma with funky notes, hints of brett and citrus. Moderate sweet with a pleasant sourness and nice yeasty and doughy flavours. Tasty and refreshing!

Bottle shared with Erwin Van Moll @ Brewpub Van Moll. Hazy pale yellow color, virtually no head. Hard to describe aroma: lightly sour, lightly grassy, lemongrass, yellow grapefruits. Tastes about the same: lemongrass, light balanced sourness, sourish fruityness. Light to moderately dry finish, lovely refreshing beer.

Bottle. Golden-yellow colour with a white head. Aroma is oak, yeast, lemon, sourness. Flavour is oak, yeast, lemon, sourness, bread, berries. Weird beer.

Bottle from Sourced Market St Pancras and drunk on train to Birmingham. Hazy very pale gold colour thin bubbly white head. Sour and yeast and lemon aroma. I thought a very refreshing drinkable sour. Aa little asimple maybe but not too lactic and the lemon dry finish is excellent. No real funk but a yeasty breadiness that is pleasant. Good.

Pours hazy pale yellow with a white head. Aroma is sour with notes of malt, lactic acid and gooseberry. Taste is light sweet and light to medium sour with along slightly dry, sour and fruity finish. Body is light, texture is thin, carbonation is soft.

Bouteille 33cl @ Il Pretesto, Bologna. Dorée paille, col fin blanc. Arôme est citrique au premier abord rappelant le cidre, le tout ponctué par un rétro-nasal farineux qui adouci pas mal de bouquet. Palais penche pas mal vers une Berliner, profil suret et funk dominant mais sans être de trop, le tout est ponctué par cet ajout de levure de pâtisserie, ’pasta madre’ très judicieux. Je note une pointe de pomme, funk, farine. 3.6% , session et unique. J’adhère.

330 ml bottle @ Bøker & Børst. Pale straw golden body with almost no head at all. Unusually aroma, acidic, berries, fruit, bread and yeast. Interesting and really nice in flavors, acidic fruit and berries with bread, yeast, wood and funky cellar notes. Some similarities with lambic and related beers, but still something totally different. Quite weird but I also find it super refreshing and enjoyable. Lots of exiting flavors without really being extreme. Nice body and long acidic aftertaste in same direction as the main flavors. Love it and need to have a few more bottles of this again.
