Sourdough Culture + Oak Barrel Fermentation
Our beautifully barrel aged sour beer has just been bottled and this batch is tasting incredible. its been blended from a mixture of 24 aged wine barrels and two bourbon to give it that kick of flavour. Read the story on sourdoughs creation bellow.
Beer and Bread have been showing off the magic of yeast for thousands of years, we decided to combine the two. The old and the new, contemporary ideas and historical techniques and ingredients, a very special beer that combines all these things and more.
6 months before we even had a brewery we started talking to Tom Herbert about the Hobbs House Bakery's 58 year old Sourdough yeast, and whether we could use it to ferment a beer. Tom was excited, we were excited!
After a year of trials (each trial took a really long time to develop) we decided to loosely base the beer on a Berliner Weisse style - a historical Sour beer style from Northern Germany, but with a Wild Beer slant to it. We have used the 58 year old sourdough culture and a little brettanomyces and put the beer straight into oak barrels for its primary fermentation.

Bottle sample at a sour tasting at kerenmk’s place. Thanks Ariel. Hazy very pale yellow. Very pleasant funky sweaty aroma, with some wood and lacto. Sour flavor, lactic, funky, woody, with a bit of vinegar. Light-bodied. Very good and refreshing.

Bottle - Tart and funky feet with some sweat. Cloudy yellow with a decent white head. Tart, light sourness, some bready funky notes and a nice finish. Funky and nice.

Bottle: Poured a lightly hazy bright yellow color ale with a small bubbly head with OK retention and some light lacing. Aroma of tart notes with light funky ester is quite pleasing. Taste is a nice simple mix of tart notes, light oak with some funky Brett notes. Acidity is very low as well as residual sugar notes. Body is light with great carbonation. Superb mix of great drinkability and loads of complexity. I also love the fact that they didn’t feel the need to go double-digit on the ABV.

Cask @ Craft Beer Co, Islington, London. Has a hazy dishwater-yellow appearance with next to no head. Carbonated and active in the palate, it has a soured fruit aroma and taste.

Bottle at the Castle Tap, Reading. It’s a hazy pale yellow with a light spritzy mouthfeel. Lots od grape and white wine up front then a light lemon flavour in the mildly dry and sour finish. It’s pretty simple, but it does work well and is very pleasant and refreshing. We used to have boys’ bitters; is this the equivalent in sour ale?

Bottle shared. Pours hazy yellow with a small off white head. Aroma if light funk, citrus and light oak. Flavour is moderate acidic and light salty. Light bodied with light carbonation. Decent and refreshing.

Pours pale, looks thin. Bit of foam. Aroma has sourness, acidity. Citrus. Taste is explosively sour. Fresh and easy-drinking. Aftertaste is sweetish and short. Good refreshing summer beer.
