Our beautifully barrel aged sour beer has just been bottled and this batch is tasting incredible. its been blended from a mixture of 24 aged wine barrels and two bourbon to give it that kick of flavour. Read the story on sourdoughs creation bellow.
Beer and Bread have been showing off the magic of yeast for thousands of years, we decided to combine the two. The old and the new, contemporary ideas and historical techniques and ingredients, a very special beer that combines all these things and more.
6 months before we even had a brewery we started talking to Tom Herbert about the Hobbs House Bakery's 58 year old Sourdough yeast, and whether we could use it to ferment a beer. Tom was excited, we were excited!
After a year of trials (each trial took a really long time to develop) we decided to loosely base the beer on a Berliner Weisse style - a historical Sour beer style from Northern Germany, but with a Wild Beer slant to it. We have used the 58 year old sourdough culture and a little brettanomyces and put the beer straight into oak barrels for its primary fermentation.

C: clear amber
N: sour, acidic, light vinaigrette, very faint cider
P: light, crisp, sour, very faintly tart, very faint fermented apples. Nice and clean even after years in the cellar.

Old rating from 30-01-17 - A 330ml bottle. It pours a pale golden colour with no head. Aromas of sourdough & bready yeast. Tastes of sourdough, bready yeast, vinegar & hints of oak. Aftertaste is quite citric with no bitterness. Overall, somewhat of a disappointment.

From tap at Oersoep Craft Beer Festival, Nijmegen. Aroma of wheat, sour citrus, lemon peel. Flavour is medium sour. Body is light to medium. Very tasty and refreshing.

Bottled@Huismann, Kokkola. Hazy yellow colour with a mediumsized white head. Aroma is sourness, some lactose, mild lactic notes as well as some slight dry wood to it. Flavour is citrusy, sourness, dry wood and some mild acidity. Really nice and refreshing. Actually an easy drinker this one.

33cl bottle from Abeervinum, Rimini, Italy. Pours canary yellow, looking really like a white wine, transparent, with no foam. Aroma is nice and funky, barn, melon, grapes. Body is average, with good carbonation. Good astringency. Taste is medium-high sour, a bit acetic. Final is fairly short.

330ml bottle. Poured a slightly hazy straw colour with a very short-lived fizzy white head and plenty of bubbles. The aroma is yeasty, zesty citrus fruits. The flavour is moderate sour, with a light, crisp, tart juicy gooseberry, light salty, light dry vinous palate. Medium bodied with average to lively carbonation.

Keg at Barrel Project. Lowkey vaguely vinous aroma. Hazy pale... yellow white. Thin creamy translucent white head. Medium-heavy sour citrus. Light bodied. Slick if thin. Dry astringent finish. Nice enough.

Bottle. Hazy pale yellow color with white head. Aroma is lemony, Brausetablette, quite citric. Taste is lemony, some veggies, Brausetablette, very tart, puckering. Oily mouthfeel with medium carbonation. Not bad.
