Sourdough Culture + Oak Barrel Fermentation
Our beautifully barrel aged sour beer has just been bottled and this batch is tasting incredible. its been blended from a mixture of 24 aged wine barrels and two bourbon to give it that kick of flavour. Read the story on sourdoughs creation bellow.
Beer and Bread have been showing off the magic of yeast for thousands of years, we decided to combine the two. The old and the new, contemporary ideas and historical techniques and ingredients, a very special beer that combines all these things and more.
6 months before we even had a brewery we started talking to Tom Herbert about the Hobbs House Bakery's 58 year old Sourdough yeast, and whether we could use it to ferment a beer. Tom was excited, we were excited!
After a year of trials (each trial took a really long time to develop) we decided to loosely base the beer on a Berliner Weisse style - a historical Sour beer style from Northern Germany, but with a Wild Beer slant to it. We have used the 58 year old sourdough culture and a little brettanomyces and put the beer straight into oak barrels for its primary fermentation.

Tap at Oersoep festival. Slight hazy pale straw with white head. Sour grains, lemon, light dough, sour milk, some light Italian herbs, white bread. Taste is medium sour and very light salty. Thin to medium bodied with fizzy carbonation.

Bottle from BottleDog. Wild beer sourdough 3.8% pours a lovely milky light gold with a fizzy fast dissipating head. The aroma is really interesting tart lactic lemon and freshly baking pizza dough from a wood fired oven. Very sharp sour taste with a prickly carbonation, a really lovely beer. Lovely light tart lactic zesty lemon flavor with some oakiness. A really wonderful light sour ale that is fairly fruity and refreshing like a nice lemonade on a hot summer day. Great.

330 ml. bottle sampled @ “Brazilian Tasting”. Pours a milky, very hazy milky lemon golden with zero head. Nose is super lactic Berliner weisse which is prefer less, spoiled lemon yoghurt, mineral, acidic, lemon & apricot acidity. Taste is lemon acidic lactic, mineral, very lactic Berliner with no complexity, quite puckering, apple, very musty,… Lighter lactic body, lower carbonation. I am not the biggest fan of these kinds of very heavily lactic Berliner’s but this is pretty decent, drinks easily. I have had sourdough bread a few times but I don’t see much flavor similarity here. I haven’t had it only a few times.

Little hazy pale lemony yellow beer, small irregular aery white head, unstable, non adhesive. Aroma: very spicy, herbal, yeast, sourish, funky, lemony, vinegar. MF: ok carbon, medium body. Taste: very lemony, sourish, funky, nice and clean sourness though, something rarely encountered in these days of hyped sours. Aftertaste: refreshingly sour, lemony, very nice and clean sour beer, well done!

Smell of dough, yeast. Hazy lime colour, minimal white hed. Aroma of sourdough, kilju, yeast. Very sour. Wild carbon, light body. Most displeasant.

A very light yellow colour, murky, a head is weak and white. Aroma has strong sourness, lemon, some grapes, green apples and wine vinegar. Taste is even more sour than aroma, lemon, white vine and grapes. Light bodied, sparkling carbonation. Very refreshning, strong sourness, good beer.

330ml bottle from Brewdog online shop. Pale yellow colour, white foam head and aroma of sour citric, vinegary pickled dill cucumber. Taste is tart, fruity sour, citric zesty, herby dill, funky yeast, with some woody oak, lactic and biscuity notes. Sharp mouthfeel, light bodied, fine carbonation, dry sour finish. Refreshing, very drinkable.
