Ale with currants added and aged in oak barrels.
When we made the Toronado’s 20th Anniversary Ale, we had no idea that it would turn out to be one of our favorite barrel aged beers we would ever make. With that said, we have always wanted to make a dark barrel aged beer using 100% Cabernet Sauvignon barrels but, we never were inspired. That is, until we blended five different beers to make the Toronado beer, the tobacco character from the the dark malts blended nicely with the furit character that developed in blending. So, with Concescration we set out to make a barrel beer using all Cabernet Sauvignon barrels. No, we are not saying that this is a replica of the T-rooms anniversary beer, after all, a beer like that can never be duplicated, and, there was no fruit added to that beer as there is with this one. All we are saying is that it gave us great inspiration to brew Consecration.

375 mL bottle, brought to Ale Alpharetta by Hamp. Pours a nice ruby brown, with no head. The nose is caramel, tart black cherries, black pepper, syrup, and a touch of rye. Very sweet and syrupy, with a nice, sharp sourness. Medium to heavy body, syrupy, sharp and fairly acidic. This is a nice dark sour - complex, rich and vinous.

375 ml swing top bottle. Pours a clear dark red/brown with light bubbly head. Aromas of oak, sour red berries and red wine vinegar. Flavors of cranberries, tart cherries, oak, and vinegar. Solid and quenching. But overpriced.

Sampler at the brewpub in Santa Rosa. Copper-amber color with small white ring. Oaky, apple tartness, plumbs, caramel. Still definitely a Sour Red, but it?s American - undoubtful. Taste is heavy on the lemon citrusness, but also plums, candied apples, and a bit bitter - feels like a heavy french red-wine, quite tanninic. Perfect mouthfeel. A truly great beer.

Luxurious specialty fruit beer aged on wine barrels. Bottle generously donated by the brewer during his visit to a friend of mine, the owner of my local pub in Ghent... Loose, quickly dissolving, off-white foam, colour a misty brownish copper. Powerful, vinous and very fruity aroma of sherry, cassis, passion fruit, balsamic vinegar, sour cherries, hay, old port wine, tobacco, wood; taste begins with a very lively, opulent fruitiness, sweetish, obviously a lot of cassis with a sharp lemony accent, drying the palate till deep into the finish, all built on a soft, caramelly and chocolatey maltiness, smooth, complex, wood in the finish with very light hoppiness and warming, sherry-like alcohol. Interesting, very vinous beer, almost like a (very strong) ’oud bruin’.
