Ale with currants added and aged in oak barrels.

When we made the Toronado’s 20th Anniversary Ale, we had no idea that it would turn out to be one of our favorite barrel aged beers we would ever make. With that said, we have always wanted to make a dark barrel aged beer using 100% Cabernet Sauvignon barrels but, we never were inspired. That is, until we blended five different beers to make the Toronado beer, the tobacco character from the the dark malts blended nicely with the furit character that developed in blending. So, with Concescration we set out to make a barrel beer using all Cabernet Sauvignon barrels. No, we are not saying that this is a replica of the T-rooms anniversary beer, after all, a beer like that can never be duplicated, and, there was no fruit added to that beer as there is with this one. All we are saying is that it gave us great inspiration to brew Consecration.

375 ml bottle into tulip glass, batch 005X2E. Pours lightly hazy/cloudy deep ruby red color with a small fairly dense off white head with decent retention, that reduces to a ring of lacing fairly quickly. Slight spotty lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big sour cherry, green apple, raisin, plum, fig, red wine, oak, clove, hay, straw, leather, musty funk, light vinegar, and yeast/oak earthiness. Damn nice aromas with good complexity and balance of fruity/funky yeast, oak barrel, and fruit notes; with good strength. Taste of big sour cherry, green apple, raisin, plum, fig, red wine, oak, hay, straw, leather, musty funk, light vinegar, and yeast/oak earthiness. Good amount of fruity/earthy sourness on the finish; with lingering notes of sour cherry, green apple, raisin, plum, fig, red wine, oak, hay, straw, leather, musty funk, light vinegar, and yeast/oak earthiness on the finish for a while. Fantastic complexity and balance of fruity/funky yeast, oak barrel, and fruit flavors; with a great sweetness/sourness balance and no cloying flavors after the finish. Light-medium carbonation and medium bodied; with a smooth, acidic, and lightly slick mouthfeel that is nice. Alcohol is well hidden with only small warming present after the finish. Overall this is an awesome fruited wild ale. All around great complexity and balance of fruity/funky yeast, oak barrel, and fruit flavors; and very smooth to sip on for the big ABV. A highly enjoyable offering.

Draft as part of the full sampler at Russian River. Slightly hazy brown/amber with off-white head. Aromas of cherries, dark fruit, vinegar. Tastes of oak, cherries, dark fruit. Medium-light body with a very dry finish. Good stuff.

Magnificent sour notes, still oaky, vanilla, so delicious. Too bad the cork crumbled& is still partially seated in the opening. Batch001x2

Bottle @ Van Moll Tasting shared by Joes. Batch 002X3. Clear dark amber, deep red color, small off-white to beige head. Smell and taste sourish, red fruits, sour cherries or sour red berries, sharp sourness, wooden barrel. Medium dry finish, medium body, medium carbonation. Certainly a nice beer, but too sharp sour for me.

Bottle @ Proeftafel Van Moll. Amber colour with a small off-white head. Smells sourish, brown sugar, cherry, red fruits. Tastes sour, red fruits, intense sour. Medium body, soft carbo, lasting sourness.

First batch bottle pour at bottleworks. The perfect beer. Strange aroma. Sour all around. Long lasting sour finish. There is nothing I can say to describe this beer accurately. The best.

On tap at the Brewpub in February 2014. Hazy mahogany with a minimal head. Wow what a beer! Vinous with red berries, oak, vinegar and lemon. Very sour and with no hints of alcohol. I am so glad that I have at least one bottle of this one at home.
