Chicory was one of the first beers we started brewing at our pub back when it opened in 1995. It's a dark beer made with a bunch of roasted chicory, organic Mexican coffee and licorice root. We use Simcoe and Warrior hops, as well as pale, roasted and oatmeal grains.
Back in 1995, we had a teeny, tiny brewing system and had to brew all day, every day to keep the bar stocked. Brewing with the same four ingredients got really boring really quickly. That's when Sam's ADD kicked in and he started adding some nontraditional ingredeints.
The roasty and delicious Chicory Stout, now available on draft only, is a fantastic food beer. It pairs very well with chocolate!

Muddy; slightly burgundian brown; chocolatey, fudgey, some nuts; a little bit chewy, like munching on chocolate malts.

This has a lot of dark roasted coffee in the aroma and flavor, with a very smokey, lingering finish. There isn't a lot of body, in fact, it's downright watery, which is disappointing. This is my first dogfish head beer, and I'm not all that impressed. I've got some more to try; hopefully they're better. [RE-RATE] I had to raise this from a 3.2. I still think it's a bit watery, but the flavor and finish are really starting to grow on me. Much more impressive on second tasting.

Tasted at the Barrelhouse Brewing Company Microbrew Fest on November 9. I still have not had the WWS yet but this seemed like a good lead-in. Poured a dark brown color with little head and lacing. Roasted coffee flavor with a dry finish. Not as good as the other beers I have tried from Dogfish Head but not a bad Stout.

What a beer! Talk about full flavor. Good malt/hop balance, but the real news here is the coffee adjuncts. Its full of roasted chicory and Mexican coffee, and tastes every bit of it (I guess it helps to be a coffee lover). It even smells a little like iced coffee. Not the kind of thing to drink alot of, but a top-notch dessert beer (which seems to be Dogfish Head's specialty).
