Chicory was one of the first beers we started brewing at our pub back when it opened in 1995. It's a dark beer made with a bunch of roasted chicory, organic Mexican coffee and licorice root. We use Simcoe and Warrior hops, as well as pale, roasted and oatmeal grains.
Back in 1995, we had a teeny, tiny brewing system and had to brew all day, every day to keep the bar stocked. Brewing with the same four ingredients got really boring really quickly. That's when Sam's ADD kicked in and he started adding some nontraditional ingredeints.
The roasty and delicious Chicory Stout, now available on draft only, is a fantastic food beer. It pairs very well with chocolate!

A dark red-brown beer with a huge brown head. The aroma contains notes of coffee and chocolate as well as hints of leather on a slightly sour background. The flavor is sweet with notes of coffee and roasted malt leading to a dry end that also contains notes of chocolate.

Bottle Pours a very dark brown with an extremely thick dense light tan head that lasts for ever. As it recedes it leaves thick almost chunky lacing down the sides. Aroma is a ver nice coffee, bitter chocolate and molassas. Flavor is very intersting. Warm, smokey, coffee but suble. Some would say weak. I love it. Very easy to drink. As if it disapears ion your mouth. Feel is a bit thin but extremely soft, smooth, and slick. Very little aftertaste. Lovely.

Pours dark black with a foamy brown head. Slight coffee scent. Flavor is of course coffee and roasted chocolate. I don't really taste chicory. Any one who has had coffee at cafe du monde in the big easy may ask the same. Goes down bitter.

Good black color, but the head wasn't a typical nice thick Stout head despite a good pour. The aroma was pleasntly yeasty and bready, but very subdued and did not intensify as the beer warmed. Lightly bitter palate as was the short finish. It had a nice chicory tang, but I was a little disappointed.

Good moderately dark brown coffee with some small tan head. Aroma is spicy coffee. Begins with a subdued sweetness, more like an oatmeal stout. Body levels off at a medium, flavor is quite subtle for the roast flavor in it. Some tart rooty flavors on the finish and as it warms the coffee comes out much better and begins to taste more like I expected (a really good beer). Need to rerate at a higher temperature.

This smooth, silky beverage pours with a tan head (not bone white...unless the bones are weathered...nevermind) and minimal lacing. Aroma is of coffee. Chicory Stout is probably more notable for its silky smooth feel than its above average but unspectacular roasted, sweet flavor. I've enjoyed this brewery's beers...bury my heart at Dogfish Head.
