Chicory was one of the first beers we started brewing at our pub back when it opened in 1995. It's a dark beer made with a bunch of roasted chicory, organic Mexican coffee and licorice root. We use Simcoe and Warrior hops, as well as pale, roasted and oatmeal grains.
Back in 1995, we had a teeny, tiny brewing system and had to brew all day, every day to keep the bar stocked. Brewing with the same four ingredients got really boring really quickly. That's when Sam's ADD kicked in and he started adding some nontraditional ingredeints.
The roasty and delicious Chicory Stout, now available on draft only, is a fantastic food beer. It pairs very well with chocolate!

Nose is like the Old coffee brands, which mixed in chicory I had as a kid, a mixture of coffee and chicory,with a licorice and molasses note; opaque black with a small, but long-lasting tan head; flavor strong in chicory and coffee, not as many flavors evident as in the nose; the finish does have a little hop bitterness.

Bottle. Dark, quite dark. The bottle claims to have a "bone white head", but it was pretty tan to me. Enjoyed the flavor, as it was not too overpowering, and was not overly bitter. Nice finish. I just had this on Cask in Falls Church Va.... Amazingly complex - far more than the regular bottled variety is. The rating now reflects the average between my original rating and the cask one.

(On tap) Completely black and opaque with a creamy, beige head. Malty nose with some roasted touches. Medium body with notes of roasted malt, chocolate and coffee. Lightly sweet and caramelish. But rather smooth and mellow without much bitterness. 280306

Bottle: Poured a pitch-black color stout with a medium head with great retention. Aroma of roasted and smoke malt is clearly dominant with a nice touch of coffee. Taste is also dominated by the smokiness and seems to leave little place for the coffee. Body is a bit thin and carbonation is low. Not bad but definitely not for me.

This stout pours a dark black with a real deep brown thick creamy head. This stouts aromas are intense at the beginning with scents of spice, chocolate and a sweet scent that I can’t put my finger on. The first sip was smooth and a little thin but still very flavourful. Not as intense as other stouts I’ve had, but good with flavours of burnt malt and coffee. A little licorice too. The finish is nice with a lingering of malts and chicory. Very good!

Thick brown head, nearly black beer. Pure jap nose, liquorice, sweet?? Only slight bitterish but burnt-roasted notes. Discreet character. Light, quite light for DFH, let alone for chicory... Aftertaste finally yields some vegetable bitterness. Sam, come to Belgium to taste Huysman aroma, ersatz coffee, real chicory. In the land of chicory and beer...
