Chicory was one of the first beers we started brewing at our pub back when it opened in 1995. It's a dark beer made with a bunch of roasted chicory, organic Mexican coffee and licorice root. We use Simcoe and Warrior hops, as well as pale, roasted and oatmeal grains.
Back in 1995, we had a teeny, tiny brewing system and had to brew all day, every day to keep the bar stocked. Brewing with the same four ingredients got really boring really quickly. That's when Sam's ADD kicked in and he started adding some nontraditional ingredeints.
The roasty and delicious Chicory Stout, now available on draft only, is a fantastic food beer. It pairs very well with chocolate!

Rated from backlog. Coffee, cocoa, and earthy, oak tree bark aromas. Dark brown with a lasting, beige head. Dry and earthy. Medium body, low carbonation, and with a woody, oaky, roasty finish. Quite complex and very nice.

0.355l bottle shared with The Tasting Crew. This is a deep dark brown one with a small quickly sidesticking brown-ish top. It has a non-extreme aroma, but I get traces of both tobacco, cocoa, soft vanilla and some peppercorns. Slightly woody as well, but quite gentle. The taste has a certain coffee-acidity at first, some traces of chocolate - the milky kind, roasted nuts and it ends with a long lingering coffee flavor. Impressive amounts of flavor packed in a "light" beer. Both pleasant and enjoyable. 26.12.2012

12 ounce bottle into signature pint glass, late 2012 bottle release. Pours crystal clear nearly pitch black color with a nice 1-2 finger dense tan head with great retention, that reduces to a nice cap that lingers. Spotty foamy lacing clings on the glass. Aromas of big dark chocolate, cocoa, dark roasted coffee, roasted malt, light caramel, toast, light wood, light char, floral, and slight licorice. Fantastic aromas with great balance, strength, and complexity of roasted flavors with the added coffee and spices. Taste of dark chocolate, cocoa, coffee, roasted malt, toast, light caramel, light wood, light char, and herbal earthiness. Lingering notes of chocolate, cocoa, coffee, toast, light caramel, light wood, and herbal on the finish for a good bit. Very nice balance, robustness, and complexity of roasted flavors, with only a light amount of added spices noted in the taste. Zero cloying flavors present after the finish. Medium carbonation and body; with a smooth and moderately creamy mouthfeel that is nice. Alcohol is very well hidden with zero warming noticed after the finish. Overall this is a damn nice stout! Very nice balance and robustness of roasted flavors; extremely smooth to drink. The aromas kind of made the taste a letdown, but this was still very enjoyable.

Good stout. Aroma of coffee, some licorice. Not sure what kind of difference the chicory gives this - not familiar enough with the coffee sit-in to tell. Pours black with some head, little lacing. Average carbonation. consistency. Taste is bitter with a very faint sour finish. A little soda water feel in finish. Medium palate. Bottle.

Bouteille 12oz. De couleur noire et opaque. Nez de malt rôti, de chocolat noir, de café mocha, léger de mélasse et avec des traces de toffee et de houblon herbeux. Moyennement ronde en bouche avec un pétillement moyen en une texture léger-moyen crémeuse. Faibles notes de chocolat au lait (notes lactiques) avec de faibles traces d’anis lors de l’entrée en bouche suivi d’un goût de malt rôti, léger de chocolat noir avec des petites notes de caramel toffee sucré et de mélasse puis en finale l’on retrouve un goût de café avec des traces de noix grillées. Post-goût long, légèrement amer de rôti et de café noir avec quelques notes de chocolat au lait.

On draught at the Wharf Rat, Baltimore 5/12/2012. Black with a tight, tan head. Big, plain chocolate notes with a slightly vegetal edge in the background, roasted malts and a full-bodied, dry finish. Very good.

Tap at Brouwer’s Cafe, Seattle - 08/11/12. Mid black with a thin coffee head, good lacing ensues. Nose comprises mineral tones, dark roast malt, touch of chocolate, damp pavements! Tastes of dark roast malts, chocolate, mineral tones, molasses, liqourice, spices. Medium bodied with soft carbonation, smooth and oily on the palate, sweet finish.

Bottle 12fl.oz.Clear dark red brown colour with a average to large, frothy to creamy, good lacing, fully lasting, light beige head. Aroma is moderate to heavy malty, roasted, shoe polish, dark malt, wood. Flavour is moderate to heavy sweet and moderate bitter with a long duration, chocolate, roasted, sweet chocolate. Body is medium, texture is oily, carbonation is soft. [20120915]
