Chicory was one of the first beers we started brewing at our pub back when it opened in 1995. It's a dark beer made with a bunch of roasted chicory, organic Mexican coffee and licorice root. We use Simcoe and Warrior hops, as well as pale, roasted and oatmeal grains.

Back in 1995, we had a teeny, tiny brewing system and had to brew all day, every day to keep the bar stocked. Brewing with the same four ingredients got really boring really quickly. That's when Sam's ADD kicked in and he started adding some nontraditional ingredeints.

The roasty and delicious Chicory Stout, now available on draft only, is a fantastic food beer. It pairs very well with chocolate!

On draft at the dogfish head alehouse in falls church Va. Pours a deep ebony with a tan head. Coffee aroma. Licorice notes along with roasted grains. Bitter finish.

Bottle @ fonefan tasting. Almost black with a beige head. Aroma is sweet, roasted malt, coffee, dark chocolate and liquorice. Flavor is quite sweet and moderate bitter. Dry and roasted moderate bitter finish. 150912

Bottle, 5.2% @ FOneFan. Very dark brown with small beige head. Aroma is roasted malts, chocolate and liquorice. Flavour is roasted malts, chocolate, coffee, liquorice, little sweet, hop and a medium bitter.

Bottle @ Really late Summer Tasting Ulfborg, 2012. Pours dark brown with a small creamy head. Roast, ashes and liquorice. Smooth and dry. Ashy. Tasty.

Bottle shared. Pours dark brown with a small tan head. Aroma is massive coffee, roasted, cocoa. Flavour is medium bitter and sweet, quite mild and short lived. Medium bodied with soft carbonation.

Aroma is roasted and slightly sour with cocoa and some milk chocolate. Foamy and a bit light palate. Flavour is a bit light, slightly sour and somewhat dry with some licorice, coffee and milk chocolate. Decent.

Bottle sample at a tasting at Dancing Camel. Thanks zvikar. Very dark brown with a beige head. Roasty aroma with coffee (a bit of espresso) and a hint of bitter chocolate. Pleasant roasty and coffee-ish flavor. Medium-bodied.

12 ounce bottle. Dark brown, black opague liquid with a big rocky tan head. Big roasted malt aroma, hints of charcoal, tobacco, cocoa and espresso coffee. The roasted malt dominates here. I can taste the chicory, licorice and coffee. The oats really make this smooth and drinkable. Their is an underlying hop prescence, but it takes a backseat to the layered maltiness. A wonderful stout that should not be missed.
