Chicory was one of the first beers we started brewing at our pub back when it opened in 1995. It's a dark beer made with a bunch of roasted chicory, organic Mexican coffee and licorice root. We use Simcoe and Warrior hops, as well as pale, roasted and oatmeal grains.
Back in 1995, we had a teeny, tiny brewing system and had to brew all day, every day to keep the bar stocked. Brewing with the same four ingredients got really boring really quickly. That's when Sam's ADD kicked in and he started adding some nontraditional ingredeints.
The roasty and delicious Chicory Stout, now available on draft only, is a fantastic food beer. It pairs very well with chocolate!

Tap at Neighborhood, SD. It pours jet black, with a thick beige head. The nose is chicory, wood, roasted malt, coffee liqueur, smoke and menthol aspect. The taste is caramel, coffee, herbal (due to chicory?), roasted malt, liquorice, umami aspect and nut, with a bitter-sweet finish. Medium body and moderate carbonation. Well balanced and enjoyable.

12 oz. bottle. Pours pitch black with a very thin, tan head. The aroma is strong caramel, oak, and light coffee. The flavor is sweet and mildly bitter. The palate is medium to heavy, sticky, and astringent. The finish is mild and clean. Overall, this is a pretty subdued stout, but not bad.

Pours a solid dark brown that lets a smidgen of light through with a creamy off white head that persists admirably. Smells of roast chocolate and caramel mostly. Slight earthy spicy edge is light but there. The taste leans a bit more to that spicy earthy edge than the aroma did. There’s definitely a roasty, coffee, caramel malt flavor here but its countered by some flavors that I’m having trouble describing. Herbal earthy almost minty flavors that no doubt come from the cornucopia of odd ingredients in the brew. Medium body and level of carbonation with a full creamy smooth mouthfeel. I kind of enjoyed this, but its not something I think I would drink very often, I find it a little weird tasting.

"Had this on tap at the Dogfish Head Alehouse in Fairfax VA. It was in a sampler glass. A - Three finger head, very dark but still pretty easy to see through. S - Wood, fig, maltiness and toffee T - Coffee, wood, earthiness. I can’t really pinpoint it but I’m guessing the Chicory wood is causing all of this deep, dark flavor to come through. M - Foarmy, light and very filling. O - This was a solid beer. It’s expensive for a 4-pack but I bought one to take home with me. I’d have it again but it’s not in my top 50 which is a shame. Have this beer with some rich cheese and something fried."

12oz bottle from DoctorB2B in a trade. Thanks! Poured into an English Pint. Pours black with a half finger of dark brown head. Aroma of coffee, chocolate, smoke, a little oak and a little asphalt. Taste is light bitter. Heavily coffee with some citrus hops in the aftertaste. Full bodied with a thick and creamy texture. Lively carbonation and a very long bitter finish. Overall, this is great. I can’t wait to drink this one again sometime in the future.

12 oz bottle from Smiley’s beverage, Dover, NH. Nose of coffee, roasted malt and chocolate. Taste follows the nose. The Chicory is very subtle. The body is a bit thin, which is the only flaw, if you want to call it a flaw. It adds to the drinkability. I personally like coffee brews and this one has nice flavor. Almost top tier. I would never turn this down. Well worth a try.

Draft @ the brewpub. Pours a black color with a small tan head. Has a roasted malty chocoalte and coffee aroma. Roasted malty coffee and chocoalte flavor. Has a roasted malty chocolate finish.

The mothfeel is initially smooth (high carbonation), but more acidic later; strong flavor of roasted malts; too strong flavor of liquorice too; compared to an ordinary American Stout, the final is quite short, with a bit of salty liquorice.
Balanced, a bit different than your usual Stout, but not impressive.
