Chicory was one of the first beers we started brewing at our pub back when it opened in 1995. It's a dark beer made with a bunch of roasted chicory, organic Mexican coffee and licorice root. We use Simcoe and Warrior hops, as well as pale, roasted and oatmeal grains.

Back in 1995, we had a teeny, tiny brewing system and had to brew all day, every day to keep the bar stocked. Brewing with the same four ingredients got really boring really quickly. That's when Sam's ADD kicked in and he started adding some nontraditional ingredeints.

The roasty and delicious Chicory Stout, now available on draft only, is a fantastic food beer. It pairs very well with chocolate!

From tap at Lord Hobo. Pours dark brown with a small tan head. Aroma is roasted malty, slight chocolate and toffee caramelish. Bitter, dark roasted malty and rather chocolate flavoured. Lingering roasted malty and chocolate finish. Smooth.

4oz sample @ Rattle N Hum, New York

Pure, pretty generic stout. Pours black with no head, taste is not very hoppy and palate is dry.

Bottle. dark brown, an inch of crema-like head that fades a bit but never disappears. Aroma of coffee, chocolate, dark brown sugar. Quite rich and sweet with mocha, brown sugar; light roasted malt. Kept in check by some indistinct drying bitterness and coffee. Overcarbonated mouthfeel. Suggestions of herbal flavours but I didn’t pick licorice or chicory (until the end when the coffee starts to seem ersatz) and I don’t know what St John’s Wort tastes like. I don’t understand why you would put chicory _and_ coffee in a beer, but never mind. Pleasant enough but muddled.

Enjoyed on tap at the mega Whole Foods in Chicago, IL prior to going to a Blackhawks game. Fantastic stuff! Appearance very dark brown/black with rich tan head. Aroma roasted malt, wood, light hint of smoke. Taste very roasty, good creamy mouthfeel, has a taste I can’t pin down and I assume its the chicory. Quintessential campfire beer, great for cool weather.

Poured a black colour with brown-red highlights. The tanned head dissipated pretty fast leaving some good lacing. Aromas were sweet and creamy. Floral hints too and apples. Taste was sweet and sour with a slight coffee aftertaste and a dry finish. Creamy mouthfeel and medium body. Very refreshing !
