Chicory was one of the first beers we started brewing at our pub back when it opened in 1995. It's a dark beer made with a bunch of roasted chicory, organic Mexican coffee and licorice root. We use Simcoe and Warrior hops, as well as pale, roasted and oatmeal grains.
Back in 1995, we had a teeny, tiny brewing system and had to brew all day, every day to keep the bar stocked. Brewing with the same four ingredients got really boring really quickly. That's when Sam's ADD kicked in and he started adding some nontraditional ingredeints.
The roasty and delicious Chicory Stout, now available on draft only, is a fantastic food beer. It pairs very well with chocolate!

This is another disappointment for me. This brewery’s experimental beers sometimes make me wish that they would take a step back. The underlying stout seems good, even the underlying coffee stout seems pretty good. The chicory kind of bothers me. It makes the beer mildly cloying. I actually wouldn’t expect this low of an abv, but it come across a bit syrupy rather than big and full. This beer is better than some from DFH, but it’s not something that I would buy again. It’s an okay beer, but there are much better stouts with lower price tags.

12 oz. bottle, pours a silky black with a coffee head. Aroma is roasted malt, coffee, nuts and licorice. Flavour is roasted malt, nuts, coffee and chicory. A fine stout.

12 oz bottle. This might just be the most fantastically aromatic stout I’ve ever put my nose into. My memory is vague, though, so it’s possible there have been better, but...aromas of burnt wood, coffee, and faint licorice are present--awesome. Pours black as can be with a rocky head which dissipates in a couple of minutes, leaving nice lacing. Tastes like beer-flavored carbonated coffee. Body might be a little on the thin side. Creamy. I was thinking this was going to get a perfect score at first, but it falls short, just a little. Great beer, though, and proof that some of the best beers don’t have to be all that big to be awesome (beer is only 5.2%).

Pint draft at Finnegan’s, Plainfield. In fact, poured from a tap with DFH’s infamous "pimp cane" handle. Opaque black, but there just a little brown at the very edges, and a light layer of brown bubbles. Smell has nuts and deep-roast coffee, fer sher. In fact, the smell is a little "burned," but I’m thinking that’s called for in this style. Taste is also big and roasty, probably the way Café Du Monde chicory coffee would taste if I’d happened to have tried it. Bitter all the way down, but I’m rewarded at the end with a nice cocoa finish.

Pitch black, with just a bit of tan lacing. Roasty aroma of coffee (chicory?), licorice, and dark chocolate. Slightly creamy, with some dried fruits as well. Very rich and complex cereals. Roasted flavor of coffee, cocoa, grains. A bit of fruit, but mainly very dry roasted. Finish is bone dry and roasty. With a touch of hops. Body is very light, which is refreshing but may be a bit of a fault, though it is very smooth-oats? A pretty great beer, though.

Bottle marked that it was made on 10/09/09. Pours with a near black body and a thick, tan head. Aroma of roast/coffee, smoke, chocolate, spice, vanilla and anise. Taste is a bit spicy, coffee, slightly vegital/grassy (think endive), and some anise. Bubbly to creamy effervescence.

Bottle. Poured black with medium beige head. Light lacing. Coffee, malt and nutty aroma. Full bodied with a strong coffee note, with some more nuttiness. Bittersweet finish, with a herbal note.

Palate: Fairly drinkable, a bit thin for the style, decent enough mouthfeel
Overall Impression: Just had this on draft at Gilly's last night, and realized I haven't rated it yet. Well that has now been remedied. It is a decent beer, but a little one dimensional for me, it could use something beyond the burnt chicory/coffee feel. I can see the appeal though, maybe just not 100% my style, but still tasty.

Dirty coffee and barley nose, with definite dark chocolate notes. There may also be dark fruits, but they seem to be overwhelmed by the more roasty aromas. Deep dark brown, thin head. Medium roast coffee flavor with an unfamiliar bitterness. Dirt and bark finish.

19th June 2008. Seems more like a porter than a stout to me. Very slight sweet note (from the chicory?). Mildly bitter coffee. Effervescent minerally finish. Good but was expecting something different or more unusual from this cutting edge brewery.
