Chicory was one of the first beers we started brewing at our pub back when it opened in 1995. It's a dark beer made with a bunch of roasted chicory, organic Mexican coffee and licorice root. We use Simcoe and Warrior hops, as well as pale, roasted and oatmeal grains.
Back in 1995, we had a teeny, tiny brewing system and had to brew all day, every day to keep the bar stocked. Brewing with the same four ingredients got really boring really quickly. That's when Sam's ADD kicked in and he started adding some nontraditional ingredeints.
The roasty and delicious Chicory Stout, now available on draft only, is a fantastic food beer. It pairs very well with chocolate!

Bottle. Rich toffee colored beer with a tan head. Chocolate and light roasty aroma with light vanilla. Chocolate and roast flavor with light coffee. Medium bodied. Malt, chocolate, and light coffee lingers.

12 ounce bottle from Wine Warehouse in Charlottesville, VA. Pours a deep, dark opaque brown color with a small head. Average head retention and lacing. Huge coffee aroma with some roasted malts and chocolate. Taste is roasted malts, coffee and milk. Creamy mouthfeel and full bodied.

Since I am ticking for a short while I thought I need to go back to this, especially when I saw it on tap at the Gutter. Pint pour is all black. Aroma is very oily roast, which is thick and smoldering. The aroma is very rich and thick, I was so surprised, it was sweet like a thick, fumy chocolate brownie. Taste lost a lot of that richness and came off as a lightly sweet, lightly roasted stout. The beer also had a nice mouthfeel, which was a bit viscous and worked well with the rest of the beer. I almost forget that DFH can make a good beer that is not uber strong and/or all hops.

Pours black with light tan head. Burnt malt and coffee aromas. Roasted malt flavor with a little sweetness and some coffee. Full body with minimal carbonation. The oats give it a nice creamy mouthfeel.

12 oz bottle. Pours black or dark brown with a medium tan head. Aroma strong dark and milk chocolates, with coffee and dark fruits backing it up. Flavor is coffee, dark chocolate, some roast. Roasted coffee builds up after several sips, but the rest of the finish is a bit too short.

Dark brown, with nutty head. Mouthfeel is smooth on the palate with a good taste of roasted chicory and chocolate. Aroma is quite subtle with a slight taste of hop. Light carbonation. A great stout, light in coffee flavor compared to some others. A gerat addition to the Dogfish Head line.

12 oz. bottle courtesy of Secret Santa (winter 07). Pour is deep black, with a nice, rocky khaki head. Aroma of Chicory wood (almost campfire) and roasted maltiness. Taste is the Chicory, roasted malt and a fair amount of bitter hoppiness. There was some background sweetness as well. Really well crafted brew, and very interesting.

Thick tan head with a virtually black body. Malty smell with roasty things in there. And something I couldn’t put my finger on in both the aroma and in the taste, probably the chicory. Has a taste of roasted malts with some smokiness. Coffee taste is there. Slightly bitter. Good, but not really great.
