Fast on the heels of our fantasticly reformulated Hops Infusion, our brewers have picked up the gauntlet and brewed a Double IPA using exclusively Simcoe(R) Hops! This west coast Hops was created in 2000 by Select Botanicals, Inc. and carries a fantastic flavor profile abounding with citrusy-grapefruit, piney, resiny notes that pushes this Double IPA over the top. 9.0% ABV in the brew gives it a nice malt foundation as well.

Perfectly clear, golden orange in color, with nicely retained head - resinous hop aroma, with an aromatic, almost wildflower-like character - cloyingly sweet at first, but those simcoe hops come in to promptly destroy that sensation - the malt sweetness sticks around underneath to keep the bitterness from getting out of hand, though - on par with 90 minute, but not quite as good as Dreadnaught.

On tap at Capital Ale House - Innsbrook on 08/30/2008. Clear deep amber body with a medium creamy tan head that persists significantly. BIG Simcoe aroma, lots of citrus and some light caramel. More simcoe flavor, lots of citrus, caramel and light fruit hints. Medium full body with moderate carbonation. - 8/4/8/3/17-4.0 From firkin at Capital Ale House - Downtown on 08/28/2008. Murky orange body with a medium frothy tan head with hop particles floating around. Caramel and floral hop aroma with some citrusy and resiny hop hints as well, lots of Simcoe. Big Simcoe flavor, light fruity hints and a firm lingering hop bitterness. Medium full body with moderate carbonation and a sticky resiny finish. 9/4/9/4/18 - 4.4 (not included in overall score) Original Rating from 05/11/2006 and 07/04/2006. Clear caramel color with a fizzy off-white head. Aroma of caramel malts, floral hops and some citrus hops and some pine hints. Strong citrus hops flavor with some floral hops and light caramel in the end. 8/4/8/3/16-3.9
