We rely on age-old tools in the brewery despite being surrounded by high technology. As a sort of compass, we use the six pointed brewer’s star to help navigate uncharted brews. The cardinal points of water, malt, grain, yeast, hops and a brewer make the baseline. From there anything goes. Sometimes the journey is as important as the destination.
You’ll notice a slight bitterness in Compass derived from our use of rose hips accentuated by high effervescence. Drink it cold from a fluted or tulip glass. And by all means, avoid sea serpents.

Hazy golden colour brew with a white creamy head, good retention and lots of lacing. Fruity grain aromas with some oranges, light tropical fruits and very mild grass. Very well-hidden alcohol, so smooth. Flavours of mildly sweet fruits with light sugars. The cereal grains are really in the background and some nice mild bitterness is left in the finish. A very nice refreshing strong ale. Very well-balanced. 9.0 ABV. Really ??

Bottle from the LCBO. Cloudy pale orangey yellow with a very small white head that doesn’t linger. Only faint lace Muted nose with light citrus and floral perfume amidst a light malt. Light caramel supports a medium bitter body with citrus and the rose hips, much more prominent than the nose alone would indicate, adding some spice. Medium oily body with prickly carbonation. Interesting.

Bottle: Poured a deep golden color ale with a medium size foamy head with OK retention and some lacing. Aroma of sweet malt notes with some citrusy hoppy notes and light rose hips notes. Taste is a well balanced mix between some citrusy hops notes, a sweet malt base and some light rose hips notes. Body is quite full with good carbonation with no apparent alcohol. Good beer thought maybe a tad too sweet for my own taste buds.

(bottle) cloudy yellow colour with a small white head; aroma of grapefruit, lemon, honey; balanced flavour with a long medium bitter finish, very nice, very well hidden alcohol

Yummmmm new beer to the Ontario market. They need to work on the copy on their bottle, which is a bit on the hokey side, but really if it’s as deserving as it’s overall, they can print anything they want. Pours golden with a little haze, just a sheet of white head. Nice floral-citrus hops nose with a seemly non-hops citrus in their too. Lovely creamy mouth-feel and flavour on the first sip, nice floral, citric bitterness in the hops, well balanced sweetness, bready malts. Lingering finish. Nice beer. Go find this beer.

Bottle - Herbal rosehip and some grapefruit citrus. Cloudy gold with a decent white head. Sweet and fruity with some significant bitterness and booze near the finish. Refreshing, bright and yet some body as well. Nice.

Had this draft beer during the 7/4 beer tour 2014 at the Bocktown. Clear pale yellah. Comes on initially like a strong IPA without the terrible hops. Then I think this must be a beldgy strong ale. Little co2 and its 9% alky surely lets you know its presence. Yes, somewhat volatile and high in alky. Smell is rather mild on the nose. Finish is somewhat medicinal.

Sample at Daily Growler UA. Cloudy pale yellow color with a medium white head that dissipates steadily to an outer ring. Partial rings of lacing on the glass. Aroma of floral hops, citrus and malt. Medium to full body with flavors of citrusy hops, grainy malt and herbs. The finish is mildly bitter with a grassy hops and lemony aftertaste. Above average overall.

22 oz. bottle. Hazy pale urine color, thin white head. Aroma is a huge amount of citrus and floral hops. Edible flowers.

Flavor is really floral. Over the top flowers and grass. Pilsner malt baseline with some citrus flavors. (Mango and tangerines) lightly acidic notes. Small traces of yeast. Lighter in body with a dry texture.

I don’t know what to really feel about this brew. The citrus and floral notes are really bright and bold, yet I feel like it has too much floral character. Nice too try and some palates may enjoy this.
