This blend of spontaneously fermented beer is aged on local raspberries. We begin brewing Coolship Red with Pilsner malt, 40% raw wheat, and aged whole-leaf hops. The unfermented wort is then transferred to a large shallow pan called a coolship, which allows the hot wort to mingle with wild yeast and souring microbiota in the Maine air. After fermenting and aging in French oak wine barrels for over two years, we add raspberries and let it rest for an additional four to five months. The finished beer is bright red in color with an aroma of raspberry and oak. Its raspberry-forward flavor is balanced by notes of light funk, apricot, and a tart, dry finish.

Bottle split at DS, from CW online, 29/09/22. Cherry red with a crimson cap that veers edgewards. Nose is tarte red berry skins, funk, damp hay, fruit balsam notes. Taste comprises damp straw, sharp raspberries, berry pips, acidic tickle, barnyard, dry rot. Medium bodied, fine carbonation, semi drying close with a balanced acidic kiss. Solid.

Bottle at the columbus tasting 29/09/2022. Thanks to Colin for this one. A light hazed pinky red coloured pour with a fine pinkish white head. Aroma is floral cherry, tangy berries, lactose, light vinegar. Flavour is composedof prickly sour vinegar, cherry, tart prickly raspberry, spicy vinegar, harsh. Palate is semi sweet, big puckering sour raspberry, woody. Good.

375 mL corked and caged bottle from State Line Liquors, 8/20/22. Hazy red, medium fizzy tan head, average retention. Aroma of funk, oak, vegetal notes, sweet berry. Taste is tart raspberry, funk, oak, vanilla. Very bright, well balanced.

Bottle at home in the garden, 9th July 22. Pours a clear cerise red. Aroma is funky raspberries and tart fruits, taste is tart, funky, earthy raspberries, loads of fruits, slight sweet jam and a cherry and raspberry tart close and linger. Great stuff

Bottled December 3rd, 2020 - pours bright red with a light haze - this is how you do sour beer - not like those fruited quick sours you see in pint cans crowding the shelf space these days - sour and funky, but in lovely balance - tart, but not so much that it burns your stomach or wrecks your palate - dry and deeply funky, with a long oaky finish - light savory notes on the tail end, with some juicy, jammy raspberry through the middle - delicious.

Bottle pour at St Gambrinus. Pours bright clear red. Raspberry, sweet raspberry jam, funk, red wine vinegar, red currant, lingering acidic finish. Medium body. Good.
