This is a tremendously delicious, textural, and fizzy county ale, bright gold colour, citric and sour, reminiscent of a good champagne or lambic but in a class all its own.

Fantôme – Golden ale, 8% alc. by volume, with a wonderfully musty and characterful aroma. There are many drinkers out there who believe this is the “Nectar of the Gods.” Certainly no other brewer makes beer like this, in Belgium or anywhere. How many beers of 8% plus offer such fresh fruitiness? A solid Belgian saison beer at its base, with an unusual overlay of fruitiness.

750ml Bottle - Golden with a foamy white head. Hay, spice, strawberries, basil and pepper in the aroma. Spicy, fruity and moderately bitter taste with herbs, tea, orange, strawberries and black pepper. Much inferior to when I last had it in 2006.

750 ml bottle, vintage 2016, bb end 2019.
Golden-amber, clear body, with a medium, frothy, light beige head.
Aroma of ripe fruits, leather, wet wood, red apples, honey, burnt sugar, some dough, some citrus, some spices.
Tastes quite similar, a bit sweeter, with some alcohol.
Medium, slick mouthfeel, with a moderate carbonation.
Finishes warming, a bit astringent, quite dry, medium sweet, a bit wooden, fruity, a bit yeasty, moderate citric, a bit spicy.

Really unique and complex, not what I expected, with quite a lot in common with a Belgian Strong Ale. Still different, there are also the typical Saison notes. The only flaw for me is the alcohol presence, that I don't like much in a Saison.

75cl bottle @ monthly tasting, Chez Sophie, Sep'18. Brought by me, picked up from Dany direct. Pours misty gold, white head. Aroma is good wild funk. Taste is crisp wild, prickly sour funk, yeasty, spicy, amazing complexity, subtle lemon citrus sweetness creeping in. Excellent. The kind of beer I could never tire of drinking.

Bottle. Color: Hazy orange golden, white head. Aroma: Peach, pear, wild yeast. Taste: Brett yeast, farmyard- like, subtle notes of peach and pear. Dry-ish mouthfeel. Average carbonation, medium body. Moderate sweet and bitter, lightly sour hints. Nice Farmhouse Ale.

Bottle @ home. Golden colour with a medium sized white head. Smells Brett, floral, barn, sweet-ish. Tastes quite sweet, malty, nice, fruity and a bit herbal at the same time. Very balanced, nice carbo, medium body.

Fun to finally try such a classic. Nice and dry, little bit of sharp acidity, some citrus. Yeasty. Quite heavy, but doesn't taste it.
