Spontaneous fermentation beer produced using only pale-ale type malt.

Iris brings together two elements that were very present in our beers until the middle of the 20th century : the acidity produced by spontaneous fermentation and the bitterness resulting from the use of fresh hops followed by cold hopping.

750ml from Sugaya. Opaque plum orange with a dense Off-White head and a fruity sweet tarts aroma. The medium body has a nice taste of tart apricots and it is silky smooth. Really good and better than I remember. 3.9-4

Bottle at Luppolo Station in Rome. Hazy dark golden color, medium resistant gassu foam. Nose: floral, yellow fruitiness, soft sauciness. Lovely. Mouthfeel: easy with character, round and soft tart, fruit, dry grapefruit finish. Wow. J

From bottle at Garage Project Kingsland, 2018 vintage. Pours bright gold. Barnyard, white wine vinegar, nectarine, unripe pineapple, noble hop spice, funk, grass, lemon zest, sage, tart finish, bit of savoury barnyard too. Fizzy body. Really good.

2016 Vintage. Complex, as it should be, with your expected tart vinegar-grapefruit front--grapefruit zest seems to be the primary characteristic at first--but with a lasting heavy oak bitterness that eventually defines the bottle. Hops don't do much other than accentuate the oak, but a subtle berry sweetness drifts among the sour bite and the woody back end, while leather and vinous notes come alive as the pint warms. The lees provide extra yeasty funk, and the fade is a clingy mix of modest bitter hops and oak. Not life-changing, but an enjoyable bottle to open the evening after your fortieth birthday.
