This bottling represents the first time Upright has ever barrel aged the Five. It never struck me as a great candidate for maturation in oak, but after draining the Fantasia barrels it seemed like a good fit to refill them. The aromatics on the Five, both fermentation and hop-based, have pale stone fruit nuances that I knew would work well on top of the otherwise spent peaches still in the barrels. It was a bit of a trial, and only two casks were filled. After several months, the beer started tasting just like I had hoped, so the two were blended and either kegged or bottled for this Sole Composition release.

On tap at Belmont Station, pours a clear pale blonde with a small white head. Aroma brings out farmhouse notes, hops and rustic notes. Flavour brings out apricot, dry rustic farmhouse notes, and oak. Very complex, with a very dry, wild and hoppy mouthfeel. Highly drinkable stuff. Awesome.

750mL bottle, courtesy of and split with julian (thanks man!), pours a cloudy golden orange with a small white head. Aroma is full of faded peaches, barnyard funk, and some mild acidity. Flavour brings out lightly tart white wine barrels, oak, some mild peaches, some musty grape and barnyard funk. Quite fruity, but obviously less so than Fantasia, but this one is a lot more oaky and vinous than Fantasia, and less sour and fruity. Highly drinkable. Delicious stuff.
