Deviating from conventional brewing methods and inspired by historic brewing techniques, we created our Pure Guava Petite Sour. Blending farmhouse brewing traditions with an old world souring technique this rustic wheat beer is brewed with the addition of oats and spiced with coriander and sumac. Fermented entirely in our distinct oak foeder, Pure Guava is an unfiltered, golden wild ale with tropical fruit aromas and bright citrus flavors created by a proprietary Brettanomyces strain. This beer is bottled with the natural yeast, if cellared in a cool dark place it will develop more complex Brett characteristics and evolve for years to come. Drink as you would a wheat beer, cloudy with the yeast in suspension. Please enjoy this unique offering in your favorite stemmed glassware and allow the beer to breathe and open up as you swirl it in your glass.

Thank you Mathieu87 & PriorL! 330 ml. bottle sampled @ “Epic beer Tasting 2016”. Black, mocha bubbles. Nose is rather metallic with very heavy roast. Taste is bitter roast, herbal, smoke is rather vegetable, leaves, bitter hop. Syrupy & heavily roasted body. Okay but not really all that for me, in general I don’t get the very high ratings that this brewery gets.

355ml bottle from Beergium. Pours orange with a tiny head. Aroma of tart berries, bretta, oak, wood, ripe fruits, some sourness. Taste is tartish, fruity and sourish with some berries, bretta, oak, funky yeast and wood. Finish is slightly stuffy, sweetish juicy fruity, tartish and sour with some bretta, funky yeast, oak and wood. Okay, a bit stuffy though.

Bottle from Boxbeers. Hazy, pale orange with off white head. Tart aroma with some tropical fruit, yeast, funk, citrus, grapes, a bit of pear. SImilarly tart flavor with funk, yeast, citrus, oak and guava. Pretty dry with a crisp, light finish.

0,375l bottle at home shared with gf. Bottled August 2015. light yellow hazy color, small white head. smells sour, wood, horse blanket, some marzipan, nuts, spices, very nice smell. light body, soft carbonation, slick mouthfeel. tastes rather citric, sour, horseblanket, light wood, herbal, spices. finishes rather sour and citric with some herbal notes. drinks very good, very refreshing.

(375ml August 2015 bottle from kihoskh.dk) Pours lightly hazed medium gold with an average white head that fades to a ring. Aroma is quite tart and lactic, fruity with some guava base notes along with passion fruit and other tropical stuff, a touch of fresh rubber, white grape, some wet funk with a little sulphur. Flavour has a reasonable of lactic sourness, citrus fruits and also some tart tropical fruit, some dusty cellar, light oak character, dry grass. Finish is dry and pretty brisk with a little Brett bite, guava more apparent in the aftertaste but not at all intense. Body is fairly light with soft but prickling carb. Nice balanced stuff but the fruit addition is kind of anonymous.

Bottle at THT. Murky light golden with slight pink hue. Lactic, light sour grains, light rubber, there’s some nice fruits but I don’t actually get guava. Under medium sour, a hint of salt. Medium bodied with slight fizzy carbonation.

Bottle shared at THT. Cloudy blond orange with a white head. Aroma of Brett, tropical fruit, guava, cellar funk. Flavour is light sweet and light moderate sour. Medium bodied with soft carbonation.
