Deviating from conventional brewing methods and inspired by historic brewing techniques, we created our Pure Guava Petite Sour. Blending farmhouse brewing traditions with an old world souring technique this rustic wheat beer is brewed with the addition of oats and spiced with coriander and sumac. Fermented entirely in our distinct oak foeder, Pure Guava is an unfiltered, golden wild ale with tropical fruit aromas and bright citrus flavors created by a proprietary Brettanomyces strain. This beer is bottled with the natural yeast, if cellared in a cool dark place it will develop more complex Brett characteristics and evolve for years to come. Drink as you would a wheat beer, cloudy with the yeast in suspension. Please enjoy this unique offering in your favorite stemmed glassware and allow the beer to breathe and open up as you swirl it in your glass.

Level 42 Tasting. Hazy gold beer, small off white head. Palate is airy and semi dry and has a fine crispness. Mild lemony sourness, quite approachable. Touch of lactose and generic fruit. Light lemony finish. Fruity linger. Okay.

Bottle shared at the Canary wharf tasting 16/02/2016. Many thanks to Kenny for this one. Clouded bright yellow straw coloured pour with a small white head. Aroma is earthy saison yeast, tropical notes, apricot, melon, light funk. Flavour is composed of slightly tangy lemon, melon, pineapple, wheaty, doughy malts, Mellon. Palate is tart, highish carbonation, straw, grainy. Lingering saison yeast character. Nice.

Bottle thanks to Kenny. It pours cloudy golden with a small white head. The nose is earthy, sweaty, musty, farmyard, grainy, stone fruit, apricot, guava? and cat litter. The taste is crisp, watermelon seed, watery, tangy, spicy, earthy, minerals, vinegar, guava, gherkin and green veg with a short finish. Medium body and fine carbonation. A bit watery and spicy.

Bottle split at the level 42 tasting, thanks to Kenny, 16/02/16. Hazed yellow with a pinkish streak topped with a moderate off white covering. Nose is pissy citrics, cactus jus, straw, brett, melon sherbet, lemon rind, funk. Taste comprises prickly citrics, light yeast, on the turn melon, funk, nettles, straw, grassy, herbals. Medium bodied, fine carbonation with a puckering curtain call. Ok.

Bottle courtesy of Henrik. Pours hazy tiny burnt golden with a small frothy white head that doesn’t leave much trace on the glass while dissipating. Smell is fruity with crackers, cereal, lemon juice, lime juice, guanabana, other undefined tropical fruits, hay, dry soil, dry wood and lemon zest. Taste is sour and fruity. Mouthfeel is dry, tart, tiny mouth-puckering and light to medium bodied. Finish is sour with crackers, lemon juice, lime juice, guava, hay, dry soil, dry wood, lemon zest and hints if barnyard. Solid citric sour base with pleasant tropical notes added. Not the best in this series but still good. --- Beer merged from original tick of Pure Guava Petite Sour on 12 Feb 2016 at 23:27 - Score: 7. Original review text: One of the weaker products of this series but still a fairly nice citric acid forward sour with some tropical notes.

Draft at Churchkey. Hazy to cloudy golden yellow color, white edge. Aroma of citrus and tropical fruit. Taste has grapefruit, pineapple, guava, soft sourness. Nice.
