This wonderful wild yeast strain is a slow burner, it likes to hang around and eat everything it can. If it is left to its own devices is will eventually begin to eat the cellulose in the wood of the barrels… What this translates into is a super crisp and fresh double IPA, extremely well-attenuated, allowing all the hop character to come to the fore.

Backlog September 2019. Bottle. Slightly unclear pale golden body under a medium sized white head. Aroma of mild, light pale malt with a slightly funky hint. Taste is a bit anonymous without any distinct direction with the exception of a funky hint. Drinkable, but probably better fresh as an IPA than a wild beer.

33cl bottle from Abeervinum, Rimini, Italy. Pours fairly hazy, orange, with medium grained white foam, moderate in size. Aroma is evidently bretted, plus melon and grapes. Body is average, like carbonation. Taste is medium sour, with quite a bitterness. The fine carbonation leaves this beer easily drinkable. Final is fairly long and sour.

In ogni caso molto buona. c. Beer-shop.it 04.04.20

Tap at Unorthodox Bar. Really big bretty barnyard character working well with the hops. Almost saisony spice, also barnyard, not much in terms of sourness (just to be clear). High bitterness though, balanced by the robust feeling of the body. Fruity flowery hops character. Big and good.
