Our mixed culture fermentation saison contains two or three strains of commercial saison yeast, along with various wild and commercial yeast and bacteria: we’ve isolated brettanomyces strains from our barrels; we have grown up wild yeast collected from local fruit; we have blended in dregs from bottles of mixed fermentation beers that we have enjoyed; and we have added commercially available brettanomyces strains, 3 lactobacillus strains, and some pediococcus. Once the saison yeast’s initial fermentation has run its course, the beer undergoes a long secondary fermentation/conditioning phase as the wild yeast and bacteria start to make their impression.
The initial result is fresh, tart, lively and sometimes citric. It has a dry finish, a spritz of carbonation, the distinctive spiciness of the saison yeast, and a touch of lemon, grass and herbs, with a cleansing and slightly sour tang. As the beer ages, the brettanomyces adds more spices, fruits, a touch of horse and leather.
Some of this Biere de Saison becomes the base beer that we either blend and ferment or age in oak barrels or foeder. The beer can be dry-hopped or re-fermented with whole fruit, such as damsons, quince or apricots.
Expect a dry, effervescent and tart / sour beer alongside notes of our chosen additions.

Craft Old Street. Keg. £10 a pint?! Lightly hazy cherry red beer, small vibrant pink head. Palate is light, thin, fairly dry and has a fine minerally crispness. Tart berry fruits. Damson? In there but a fair dose of cherry and traces of raspberry and strawberry. Whisper of bakewell. A little acidity stops me from chugging this and leaves a sharp tang. Decent. Couldn't drink a pint even if you bought it for me.

Bottle from the brewery in Bermondsey and drunk at home. Clear deep red colour disappearing pink head. Damson aroma and some lovely funk. Good damson flavour and some good saison type yeast. The fruit is lovely and is perfectly sour sweet balanced for me. Yes the fruit is delicious.

Reddish color, no head. Aroma has notes of red fruits, tarty hints. Flavos with hints of citrus, cherries, slight sourness. Light to medium acidic final, red fruits are mostly present.

Keg at the Cock, 12/04/18. Ribena Reddish to light purple with little in the way of a head. Nose is cherry drops, soured red berries, damp straw, plum jam. Taste comprises tangy berry fruits, light funk, damp hay, damson tang, dusty fruits. Medium bodied, fine carbonation, semi drying close. Solid jammy saison .

Tap@The Kernel TTO, Dispensary, Copenhagen (14/04/2018) - red coloured pour with a thin white pinkish head. Plum and berry fruity, slight tartness, nice damson notes, medium to light body, notes of yeast, nip of spice, wooden accents, delicate fruity into the finish.

From tap. Pours hazy amber, small whit head. Aroma is almondish, dry and fruity. Citric, dry and cherry fruity. Lingering dry and cherry to almondish fruity finish.

Bottle at Partizan thanks Seth. It pours hazy purple with a small, bubbly white head. The aroma is musty, oily, juicy, berry, plum, funk and damson. The taste is dry, bitter, tart, juicy, damson, plum, wood, earth, musty, funk, wood and a touch of spice with a drying finish. Medium body and fine carbonation. Nice funk and fruit. Rather good stuff.

Bittle share at partizan. Thanks to Seth. A hazed plum pink, coloured pour with a fine pink head. Aroma is pink grape drink, jammy red berries, plum.. Flavour is composed of sweet mixed red fruit, cranberry plum, damson, red grape. Palate is semi sweet tangy, highish carbonation.
