Our mixed culture fermentation saison contains two or three strains of commercial saison yeast, along with various wild and commercial yeast and bacteria: we’ve isolated brettanomyces strains from our barrels; we have grown up wild yeast collected from local fruit; we have blended in dregs from bottles of mixed fermentation beers that we have enjoyed; and we have added commercially available brettanomyces strains, 3 lactobacillus strains, and some pediococcus. Once the saison yeast’s initial fermentation has run its course, the beer undergoes a long secondary fermentation/conditioning phase as the wild yeast and bacteria start to make their impression.
The initial result is fresh, tart, lively and sometimes citric. It has a dry finish, a spritz of carbonation, the distinctive spiciness of the saison yeast, and a touch of lemon, grass and herbs, with a cleansing and slightly sour tang. As the beer ages, the brettanomyces adds more spices, fruits, a touch of horse and leather.
Some of this Biere de Saison becomes the base beer that we either blend and ferment or age in oak barrels or foeder. The beer can be dry-hopped or re-fermented with whole fruit, such as damsons, quince or apricots.
Expect a dry, effervescent and tart / sour beer alongside notes of our chosen additions.

Tap at beerlovers bar. Pours pi kish red. Small pink white head. Smell is fruity. Taste is mildly tart, very fruity. Médium full taste. Ends very dry, too dry for my personal taste. OK

Tap @ Mikkeller Beer Celebration, Copenhagen, 2018. Pours hazy reddish with a white head. Candied fruit, fresh raspberries still. Funky and dry with a touch of medicine.

Sample at MBCC 2018. Poured a hazy dark pink colour with a frothy pink head. The aroma is yeast, damson, some fake sugary notes. The flavour is moderate sour with a light, crisp, refreshing tart damson fruit palate. Medium to light bodied with lively carbonation.

Sampled @ Tilquin English Beer Festival 2018. A slightly hazy golden beer with a small white head. Aroma of wheat, some brett and citrusy banana. Taste of tart pale fruits, brett, banana, light tart fruity finish m.

Sampled draft @ Gollem. Bright pink, red purple, little pink head. Nose is red berries, prunes, skins all the way, cherry skins,… Wonderful cherry skins, massive grape skins, prune, so much vinous fruit skins, low lemonade, lime, damn tasty. Really great beer.

Tap, April 2018. Aroma is spicy yeast, dough, plum and other red fruits. Taste is beautiful plum flesh, dough, fresh yeast, sorbet-like. Dry finish. Oily mouthfeel with natural carbonation. Tasty. 7-4-8-4-15 Bottle, in September 2018 - better than the tap. More fruity, less yeasty. Very good! 8-4-8-4-16

Tap at Gollem Antwerpen. Bit hazy deep ruby with dark pink head. Soft funk, light spicy yeast, sour plums, black currants, fresh grass, soft glue, lemon. Almost medium sour and soft bitter. Under medium bodied with crisp feel and soft fizzy carbonation. Right up my alley.

Draft at Gollem Beers & Burgers, Antwerp. Hazy red purple with a pink head. Aroma of red berries, floral notes, tart red fruits, citrus and tart plum. Flavour is light to moderate sweet and above moderate sour.
