These elderberries were wildcrafted in the mountains of Cottage Grove, hand destemmed and fermented whole in a red Bartlett perry. Floral, vinous, fruit-forward berries hail from the rugged Oregon wilderness into a rich and full bodied pear complexity.

International Cider Festival 2019. Bottle. Clear rusty red and some bubbles. Light sweet and sour elderberries on top of very dry pear. Sweet berry lemonade mixed with very dry perry. Bottle sampled at Cider festival. Clear deep red with almost white head. Sweet pears, light berries, a hint of funk and glue, oak, grassy, milk, pear schnapps. Medium sweet and sour. Medium bodied.

Capped, waxed 750/ No: 0400 from Made in Oregon. Pours a near-fluorescent bright "red" with a transient pink head. Aroma is elderberry - makes me think of jam! Med minus body. Flavor is pear and fairly strong elderberry. It’s astringent/tart. Clearly dry. Not to be missed.
