Poured from a 750 ml bottle. Aroma has moderate wheat notes with hints of grain. Light notes of lemon and lime. Hints of herbal, peppery spice notes and light fruity esters of red apple and pear. Pours a slightly hazy, gold color with a medium large, thick, pillowy white head that recedes to a small film that lingers. Moderate lacing and faint legs. Flavor is somewhat sweet with light acidity and light wheat and grain notes. Moderate bitterness and light alcohol spice. Quite a bit of red apple and pear esters with some lemon and lime notes. Light peppery, herbal spice notes. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a pretty nice and unique beer. Not a ton of hop character but lots of wheat and fermentation character.

Bottle. Color: Slightly hazy golden, frothy white head. Aroma: Malty, spicy, some hop. Taste: Wheat malt, subtle spicy notes, moderate hopbitterness, sourish lemon and citrus fruit notes, some citrus peel. Hints of wet grass and hay. Moderate sweetness. Medium body, low carbonation. Dry mouthfeel. Somewhat more bitterness at very dry finish. More flat than any other Fantôme I've had before, as far as I can remember. I was surprised by the sourness of this beer, somehow I didn't expect this but the fruity sourness gives this Fantôme a nice, refreshing twist. Another nice one from this great brewery.

Collab between Belgian Fantôme and Cellar West in Lafayette (east of Boulder, Colorado, USA), a wheat saison brewed with 'Colorado hops' - I assume hop varieties grown in, and perhaps developed in, the state of Colorado, as 'Colorado' as such is not a hop variety; also spiced, as is almost obligatory in a Fantôme beer, even still today. Eggshell-white, medium thick, membrane-lacing, mousy and stable head on a clouded apricot blonde beer with vague khaki tinge. Aroma of green apples, unripe nectarine, ripe yellow gooseberries, soggy white bread, fresh rosemary, wood sorrel, freshly cut bull thistles, wormwood, soap, green banana, hard pear, freshly cut white radish, pumice, grass. Crisp onset, strong 'crystalline' carbonation with very refreshing effect, an effect aided by some citric, bright pomelo-like fruity sourness, supported by aspects of green banana, unripe green melon and Conference pear as well as green apple-like acetaldehyde; supple, bready maltiness, white bread crumb-like and a bit cereally as well as wheat-sourish, with this pale green fruitiness meeting a rather dark green spiciness in the end, reminiscent of wormwood leaves, thyme and rosemary, adding not too much retronasal aroma, rather a 'green' bitterness that connects with the bitterness of these 'Colorado' hops, even though the latter fail in delivering the expected exuberant New World aromatics. Still a refreshing, leafy, long finish, crisp and elegant, with a chalky note lingering in the background. Sourish, fruity, crisp and herbal 'farmhouse ale' the postmodern, Anglo-Saxon way, but still with recognizable, distinct, spiced Fantôme stamp. Took me a while to get used to completely, but once this stage set in, I managed to greatly enjoy it, even if it is not Fantôme's most idiosyncratic offering.
