Our friend Yvan de Baets of Brasserie De la Sebben first introduced us to the practice of Bière de Coupafe. While it historically took many forms, we were inspired by the practice of “cutting” aged beer with young beer. In this case, we “cut” our blended Jester King SPON with young farmhouse ale. Unfiltered, unpasteurized, and 100% naturally conditioned.

Tasting at Matt's; vintage 2018, 5.4% ABV
Cloudy blond colour. Funky aroma, some barn. Dry, lean mouthfeel, funky flavour with some citrus zest and light peppery note.
Very good.
