Our friend Yvan de Baets of Brasserie De la Sebben first introduced us to the practice of Bière de Coupafe. While it historically took many forms, we were inspired by the practice of “cutting” aged beer with young beer. In this case, we “cut” our blended Jester King SPON with young farmhouse ale. Unfiltered, unpasteurized, and 100% naturally conditioned.

WeWork tasting (20.01.2019). Pours creamy orange with some white foam on the top. Nose is nicely funky, soft apple juice fermentation thing going on. Tastes tart, quite natural and juicy with some funk and a bit of barnyard. Quite mild compared with many other beers in this tasting. Feels like some original geuze from Belgium, pretty awesome in that sense.

Capped 750 from Cap Tap. Pours hazy gold with a white head. Mild fruit aroma. Near med body. Flavor is earthy, arguably has mixed bacteria, there’s some astringent oak. Very light fruits suggesting something toward citrus. No flavor is particularly strong, but it’s pleasant. Easy drinker.

Bottle at Jester King, pours a cloudy golden with a small white head. Aroma brings out farmhouse funk, some barnyard notes, horse blanket and rustic yeast. Flavour is complex as hell, with lots of barnyard funk, horse blanket, and rustic farmhouse yeast. Complex as hell - a wonderful blend of gueuze-like notes and saison character. Phenomenal.
