The Bons Vœux is a blond top fermentation beer with refermentation in the bottle.
Since 1970, the brewery has been brewing a special beer to give as a new years present to their best clients. (the name of this beer “Avec les bons Vœux de la brasserie Dupont » means « With the best wishes of the brewery Dupont » ).
Because of the increasing success, they started to commercialise this “cadeau” but kept the name. Although the demands were considerable, only a small quantity was brewed, so they had to make a reservation list, even months before new year.
This Bons Vœux is coppery blond, has very fine hoparomas and tastes bitter, fruity and mild.
Our selection of yeasts, in combination with a longduring riping process, on a “dry hopping” base, are creating a typical and complex aroma and taste.
A real refermentation in the bottle, which will continue for a long time in your cellar, result in a harmonious and well-balanced beer, full of unexpected and complex aromas.

375ml bottle from Appellation Wines, Dalry. Pours hazy orange-yellow with big frothy white head. Aromas of wheat, hay, lemon, and a spicy yeast note. Taste brings an orange bitterness, pale malt/white sugar sweetness, but finishes on a cleansing bitter note. Warming alcohol creeps up at the end. Lovely.

75 cl bottle. Hazy to cloudy yellow golden colour, nice frothy white head, stays for a while, foamy layer with yeast islets remains, good lacing. Aroma bread, banana, dough, citrus, floral hops, earthy, bit cheesy, citrus. Taste light sweet, light bitter, light acidity, very complex. Full body, smooth oily texture, creamy mouthfeel, average carbonation. Bittersweet finish in which bitterness lingers on, bit spicy, hint of sourness. Well-balanced and complex brew, excellent.

Bottle with mR_fr0g at his place on 12 October. Poured a hazy golden colour with a thin white head. Aroma of Belgian yeast, straw and apples. Grassy flavours with some citrus and bready malt. Finishes with hay, orange peal and cloves. Very tasty.

Bottle at home at Beese Tasting. Hazed golden orange, with a white steadfast white frothy head. Aroma is spicy phenols, classic saison yeast esters. Some pineapple in the nose as well. Flavour is wheaty cereal, spicey, light fruits. Light bitterness. Very nice.

750 ml bottle into tulip glass, bottled 4/30/2012. Pours fairly hazy and cloudy golden amber color with a 3 finger foamy and rocky white head with incredible retention, that reduces to a nice cap that lasts. Thick foamy lacing clings around the glass, with plenty of streaming carbonation retaining the head. Amazing appearance. Aromas of big lemon zest, apple, pear, pepper, clove, grape, herbal, floral, grass, bread, light funk, and floral/yeast earthiness. Incredible aromas with great balance and complexity of fruity/spicy yeast ester notes with a light malt balance; and good strength. Taste of big lemon zest, apple, pear, pepper, clove, herbal, floral, grass, light funk, bread, and floral/yeast earthiness. Good amount of earthy spiciness on the finish; with lingering notes of light fruits, pepper, clove, herbal, floral, grass, light funk, bread, and floral/yeast earthiness on the finish for a while. Incredible complexity and balance of fruity/spicy esters with a light malt balance; and zero cloying flavors after the finish. High carbonation and medium bodied; with a very crisp, dry, and prickly mouthfeel that is great. Alcohol is very well hidden for 9.5% with only a slight warming noticed after the finish. Overall this is a world class saison! Incredible balance and complexity of fruity/spicy esters with light malt balance; and extremely crisp to drink for the alcohol level. Absolutely insane.

Draught at Moeder Lambic Fontainas. Hazy amber liquid with medium to big white head. Aroma of white pepper, bread, flowers, light bubblegum and bread. Taste is light sweet and light to medium bitter with notes of white pepper, bread and flowers. Light to medium bodied with medium carbonation. Nice, though a bit sweet for my liking.
