According to folklore, Tai Sui (太歲), was a magical monster that regrew whenever eaten. In essence, it was a little like a baker’s sourdough mother, alive with life forms from its surroundings. This bottle captures the life work of these beings in beer form. A take on a rye sourdough bread, this is a rye ale fermented using Gregoire Michaud's sourdough starter, which started in Hong Kong. It is dry, has a rye & oak kick with a touch of sourness and bit of funk.

Bottle shared at Mechazilla. Thanks Brandon! Pours a hazy brown-rust color with a finger of soapy off-white head. Big sourdough bread aromas with some light oak notes. Creamy on the palate with average carbonation. Nice light sourness and chewy, bready malts. Well-balanced but lightly dry on the finish. Cloudy slightly sour. Rye sourdough bread, medium body. Nice sourness . Low carbonation. Nice

Draft at Brewdog. Hazy dull honey copper pour with minimal head. Aroma is big malty sourness in an unusual way. Taste follows. Like spicy sourdough bread. Very malty in a weird funky spicy way. Not my style but interesting - wouldn't get again.
